Confession. I wasn’t always a soup fanatic. In fact, I kind of hated soup. I know, I know, it’s blasphemy.
I don’t know why. It just didn’t appeal to me. But, I was very picky until around 22 years old, when my taste buds finally expanded beyond plain pepperoni pizza, bagels, and fast food. (I try to remember how picky I was when the kids didn’t eat their dinner.) So, who knows why soup didn’t appeal to me? We never had it much growing up that I can remember. But I’ll never forget the first soup I liked. It was a cold, rainy day in Vancouver, Washington. My aunt went to work making minestrone soup for my grandpa and me. Now, when she said she was making soup, I was polite and interested in the weird onion things I’d never seen before she was prepping (leeks), but not excited. Then, the soup spent all day on the stove, producing, quite honestly, the best smells I had ever smelled. Seriously, the way this soup makes the house smell is indescribable. I still didn’t like the idea of soup, but because of the way it smelled, I HAD to try it. Of course, I was hooked. But I thought it was a one-off; there was just this one soup for me.
Then, a year or so later, I had a group of predominately Asian friends in grad school who wouldn’t take no for an answer when it came to soup. Most of them had grown up eating soup as a staple food, and they were appalled by my anti-soup sentiments. But, slowly, sometimes, due to a lot of peer pressure to try new things, I found I did like some soups.
I’m still not a fan of stews or anything with too many beans in it, but other than that, it’s like a whole new world has opened up to me. A world where it’s easy to get protein, hydration, and fiber all in one delicious, soul-warming bite. Now that I live somewhere much colder than anywhere I’ve lived in the past, I’m so grateful for my love of soup. So, for today, I rounded up all the soup recipes here at HH.
