In a meal planning rut? In the past, I included what was on my meal plan, but nowadays I’m doing so much recipe development I hardly get the chance to remake anything. So, my meal plan ends up being a list of new recipes you won’t get until the following week or later, that isn’t helpful! So, I’ve decided to institute a Sunday series for your meal planning pleasure! It’s just five healthier dinner options to give you ideas on what to put on your meal plan! I’ve included one breakfast idea that you can easily meal prep and five dinner ideas. My thought is to use leftovers for lunch, happy Sunday meal prepping!

Baked Coconut Shrimp with Spicy Mango Dipping Sauce + Veggies of Choice

Honey Roasted Carrots + Baked Chicken + Brown Rice
BONUS RECIPE – Easy Taco Lettuce Cups
Ingredients:
- one pound lean grass-fed ground beef (affiliate link: I get my grass fed meat straight to my door from Butcher Box, it’s freaking amazing)
- 2 tablespoons taco seasoning
- 1/2 chopped large onion
- 1/2 tablespoon oil
- 16 romaine lettuce leaves, washed
Directions: Add onion to skillet with oil on medium, saute until translucent and tender. Add ground beef to skillet, sprinkle with taco seasoning and cook it until it is fully browned and reaches 165F. Eat in lettuce cups, top with salsa and guac if desired!
Serves 4
PS Since next weekend is a weird holiday week, no new meal plan!
