Hello from four-month sleep regression H. E. double hockey sticks. Our little amazing sleeper that only wakes up 1-2 times a night now wakes up every 45 minutes to 2 hours. This Mama needs all the coffee, prayers, and patience you can send. Mr. Hungry and I have a system going, so that’s good. I know it’s temporary, and we will get through it, but still, it’s a rough transition to go from a baby waking up 1 time a night to 4-6 times. I know as soon as we can get her in her own room at night, that will also help. We are working on transitioning the boys to sharing a room. More on that below.
This weekend, the boys start soccer (KK’s first time!), and KJ has a bunch of swim makeup classes to do. Other than that, I’ll be shooting a recipe, and we will be doing the weekend cleaning grind. The weather is at least cooler in the mornings now (not like real fall cool, though, but cool enough) we can go on walks, boys can ride their bikes, etc. What are your plans this weekend?!?!
Friday Food & Favorites
Coconino County Fair
For Labor Day weekend, we headed up to Flagstaff to see my Aunt and Uncle as well as go to the Coconino County Fair. They had all kinds of animals, food, shops, entertainment/live music, and, of course, rides/games. For my Phoenix friends, this was nothing like the Maricopa County Fair. It was small, quant, and really laid back. Reminded me of the Pima County Fair I went to in college down at UofA in Tucson. We will definitely head up again with the kids next year for the fun!
The kids also had a blast playing at the neighborhood park/school. After being cooped up inside because of the heat all summer, they had fun just being outside 24/7 in the nice weather.
Weeknight Meals
I didn’t get a chance to share a full weeknight dinner post this week, so I thought I’d share what we ate this week! I don’t have pictures of the kids’ plates, but ya know, the usual, they take 3 bites of something, drink water/milk, and say they are done. We don’t provide alternatives because we make sure there is something like fruit on their plate with their meal. They eat big breakfasts ha ha
Monday – not pictured – Tuna burgers/patties and leftover veggies
Tuesday – Butcherbox meatballs, new roasted red pepper sauce from Trader Joe’s on Banza spaghetti (I get my Banza at Thrive Market) with broccoli. PS We like the roasted red pepper sauce, but it was a little bland when it got on the pasta. Next time, I’d jazz it up with some sun-dried tomatoes and parmesan (for Mr. Hungry since I’m dairy-free.)
Wednesday – Air Fryer Chicken Shawarma, almond flour crackers, cherry tomatoes mixed with TJ’s dairy-free tzatziki and dill, and roasted red pepper hummus. I also ended up adding more tzatziki on top of the chicken.
Thursday – shrimp from ButcherBox, frozen stir fry veggies from Costco, and a rice packet mixed with Thai Sweet Ginger Sauce from TJ’s and Spicy Kimchi from TJ’s (can you tell I went to TJ last weekend? Haha)

Convertible Bunk Beds from Storkcraft – Greenguard Certified
We bought some things over the holiday weekend to start the transition to the boys sharing a room. These bunk beds were $200 off. I had some questions about how such a cheap bed could be Greenguard-certified and be durable. But it has excellent reviews and retails for over $400 at Home Depot, which also states it’s Greenguard certified. I feel like Amazon info can be questionable, but since I saw Home Depot had the same information, I felt better haha. So now Mr. Hungry and his dad have two beds to build sometime before fall break, when we will make the official transition. I really like that they can be convertible because although KJ says he wants a bunk bed, I feel like he also might be a little too scared to sleep on the top bunk just yet. My feeling was right because right after we ordered it, he said he didn’t want a bunk bed. He just wanted a regular big boy bed, haha. It’s fine. He has time to decide because as long as KK isn’t crawling out of the crib, we will likely keep him in it, so we only need one big boy bed to start with (since baby girl needs a crib ASAP.)
I also got a BEAR Kids Cub Mattress, which was the least expensive Greengurad Certified mattress I could find. It also had excellent reviews and was listed on several “nontoxic” mattress lists I found online.
Fitness
I’ve been enjoying running and lifting. Still doing Expecting and Empowered return to running and postpartum program week 16/17. It’s fun!
