Happy Fri-YAY friends! How is life in your neck of the woods?
This weekend I have an online training class to complete to be able to teach online for the summer since all classes have been moved online for the summer. It’s a training about designing courses online to be effective and flow easily, so I’m excited to complete it. We also had the drywall put down in the Master Bath we ripped out, so now it’s time for paint and tile! The fun part!
As Arizona opens it’s economy back up (despite skyrocketing case numbers), I have a lot on my mind. I’m not sure how to feel, and as Mr. Hungry returns to work soon, how to decide what levels of risk are appropriate for myself and the more vulnerable members of my family.
Sometimes it seems like there are no right answers, and it makes me crazy. I went to get an antibody test, and it was negative. So, that was disappointing, but not surprising. How about you? Is your state opening back up, or are you still on lockdown?

This porcupine toy thing is KJ’s newest obsession. He LOVES it and plays with it at least ten times a day. I try to treat it like a puzzle and keep all the pieces in a baggy, so he has to ask to play with it. That way, he doesn’t get bored of it, and the pieces don’t go missing.

Butcher Box
My Butcher Box also came! So nice to have a full freezer! I’m super excited to try their new sweet Italian pork sausages. Last I checked, they have a waitlist that they are slowly opening up as they ramp up capacity. If you’ve never heard of them, you can see read my full review here.
Food
We’ve loved Rubio’s burritos lately, the shrimp and bacon one is my favorite! It lasts me two meals and their chips are SO DELICIOUS!
Mother’s Day kicked off with biscuits and gravy, plus donuts from Donut Parlor. It was delicious! We kept it low key, and I didn’t even really take any photos except this one of my food.
I’ve had a rice cake with PB and banana before working out every morning, and although it’s light, it’s working well! I work out at a weird time, around 730/8 am, just late enough to eat breakfast but early enough to not want something big or I’ll be tasting it while working out (I know TMI.) So the rice cake has been the answer!
After my workout, I have a protein shake and the rest of my banana. When I get hungry mid-morning, I have a seed ball.
I didn’t take a ton of pictures of dinners I’ve been making. Dinner time has felt kind of hectic recently. I do love the combo of baked beans and hot dogs, though, and I had that a few times last week! Although I need to find a way to “doctor up” some of my canned beans, some of them aren’t great (read bland and boring). Do you add brown sugar? More than that? Tell me all the things!
And of course, I made my gnocchi and sausage sheet pan meal one night after my recent massive trip to TJ’s.
Mr. Hungry and I have been downing these little boxes of yogurt and chocolate covered raisins Sun-Maid sent me. They are the perfect afternoon treat!
Fitness
Burn Boot Camp is opening up this week, and I SO BADLY want to go in, but I think I’ll hold off for a while. It’s just not a risk I feel that I need to take, if I didn’t have a home gym, I would, but because I do it feels like I shouldn’t. I miss it, though.
