Happy Friday, friends! This was my first week back to teaching, and so far, so good! Last semester I was commuting downtown four days a week, which was way too much. This semester is only two days, which is great. I’m familiar with the campus and all the materials. It’s so much less stressful than last semester. Thank goodness!
What do you have planned this weekend?
I’ve got to get up bright and early to try to get some bloodwork done, then fit in a workout around a couple of meetings. Then tonight, it’s time to catch up on Vikings and Shameless! As for the rest of the weekend, no big plans!

Food Favorites
This week I got to try a couple of new to me products through the Sprouts Farmers Market partner program. One was this Urban Pie Pizza, which I had with leftover roasted cauliflower.
I LOVE that the toppings are uncured, that’s so hard to find in a frozen pizza. Mr. Hungry and I both thought it was delicious!
I also tried this Caulipower chicken tenders. I love Caulipower products, and these were no exception!
I wouldn’t eat them or buy them on the regular because they were kind of pricey (and high in sodium), but good for a quick meal to keep in the back every once in a while. They saved my butt when I had nothing else to eat for lunch yesterday!
And over the weekend, I had a dose of my favorite meal while we finally fixed the tiles on the floor that had been broken for like six months. Hello Chipotle, I’m scared of your romaine lettuce, but not scared enough to part ways with you.
The baby enjoyed a ton of vegan blueberry oatmeal bake and baby meatloaf muffins this week. I had to limit his fiber intake a bit this week since his poor tummy has been off since being on antibiotics a couple of weeks ago. Dang those antibiotics!
