Hi Y’all! Â I have an awesome and quick meal for you today that I’ve literally been eating every day since Thursday. Â I forgot how delicious tuna salad can be and it’s such a quick easy meal I thought I’d share it here!
Here is what I’ve been using to throw it together:
– 1 stalk celery
– 1 roma tomato
– dash of garlic salt (over the veggies before I add the tuna)
– 1 can of Skipjack tuna from TJ’s
– enough miracle whip light and mustard to make it a bit creamy ( couple spoonfuls)
Then I realized the miracle whip I’ve been eating expired in February… well I’m not dead or sick yet and I thoroughly enjoyed my tuna salads. Â However, once I threw it away I decided to try making some at home. Â Anything you can eat 6 months past it’s expiration date (other than maybe canned beans) really shouldn’t be for human consumption, right? Â But making mayo sounds intimidating, when you google it you get a million post on how NOT to fail at doing so. Â So naturally I assumed my first attempt would be a fail, I was thrilled it even came together and looked like mayo!
A wee bit too much garlic though, I’m thinking I’ll share the recipe via video format when I get it down. Â I’m still amazed I was able to pull off mayo consistency and it wasn’t even that hard!
