Hi Friends! So first up on today’s agenda is this delicious chocolate coconut high-protein chia pudding. I could eat this for days…. oh wait I did, I remade it twice before I could wait to photograph it!
Basically only four ingredients (plus toppings) it is so incredibly flavorful and delicious you won’t know what to do with yourself or how to stop making it. I ate this for breakfast, dessert and randomly throughout the day to satisfy my sweet tooth. Another healthy make-ahead meal for the win!
High Protein Chocolate Coconut Chia Pudding
Ingredients
- 5 ounce container of greek coconut yogurt I like Trader Joe's or Siggi's, but any will work
- 3/4 cup unsweetened vanilla almond milk or other non dairy milk
- 1 scoop chocolate protein powder I used whey
- 2 tbsp Chia Seeds
- optional toppings - banana dark chocolate, coconut flakes, etc...
Instructions
- Combine first four ingredients in a bowl. Let sit overnight or for 12 hours (in the refrigerator) to let chia seeds swell and create the chia pudding texture.
- Top with desired toppings and devour!

Recent Eats
So I’m trying to do a better job of snapping all my meals (hungryhobbyrd) so I figured I’d bring you the three days of eats via snapchat (or at least the ones I remembered to screenshot.)
Sunday
This was a travel day for me. I started the morning with a blonde roast and a feta wrap while I went to last IDEA World Blog Session. Not pictured was the collagen I added to a second cup of coffee, I was DRAGGING and absolutely exhausted. I drank the coffee and ate a pure protein plus bar. Funny fact, I used to eat pure protein all the time because they were cheap at Costco. When I started getting pickier about ingredients I shifted away from them, it is good to see they have come out with a new product line that has cleaner ingredients. I then snacked on the Lorissa’s Kitchen jerky on the shuttle ride over to the airport – another expo treat. I’m glad I snacked on it because I got a little nauseous on the drive. I felt bad there were tons of conference attendees in the van talking away but it was all I could do not throw up. I ended up rallying at the end, but still. By the time I got through security it was time for lunch I was thankful to find a simple salad and banana at some stand. When Mr. Hungry picked me up he asked if I wanted to go out to dinner to catch up and relax. We decided to swing by Whole Foods where I got a salad topped with roasted veggies and tofu. Dessert was an epic spoonful of peanut butter and then natural calm. I felt like I hadn’t slept in days, it was good to be in my own bed!
Monday
So apparently I didn’t screen shot the snaps I sent out. I can tell you for breakfast I had an egg quesadilla that was epic. For lunch, my taste buds were all off from the traveling so it ended up being yogurt and snacks. I had a protein shake around 4pm and then dinner was back on track with a salmon spinach salad. Dessert was a slice of Dave’s Killer Bread thin sliced good seed bread and Nuttzo.
