Hello friends! It’s getting warmer outside so that means I crave smoothies, yogurt, and chia pudding for my breakfast fuel. This week I’ve been enjoying my newest and most favorite chia pudding recipe ever. (Never heard of chia seeds before? Click here to see my post on the benefits of this tiny superfood.)
First things first, I got these containers of PB2 on sale at Big Lots for $4.00 bucks each, it was such a good deal I just couldn’t pass it up.
Now, generally I love nut butters in their pure natural form. All kinds of nut and seed butters are loaded with healthy fat that not only protect against heart disease but also help keep our waistline slim (when consumed in moderation) by helping keep us full. However, PB2 is a great way to add a flavor and protein punch without overdoing it on the calorie level. So I thought it would be great in chia pudding because chia seeds are a superfood that supply their own dose of healthy fats, particularly omega 3’s which fight chronic inflammation.
So this recipe covers you on the fiber, healthy fat and protein side of things to help keep you full all morning. The chia seeds also supply rehydrating electrolytes, so it’s great post AM workout for repletion. Did I mention it taste like butterfingers yet? Dessert for breakfast is my favorite kind of breakfast. So it’s pretty much my favorite chia pudding recipe ever. Don’t take my word for it though, try it out and let me know what you think!
