Champagne Mini Donuts are the perfect boozy paleo-friendly treat for any celebration!
Merry Christmas Hangover! I hope you had a wonderful Christmas! Recap coming soon I swear, but the family is still here and I want to get back to hanging out with them.
In the meantime, I HAD to share this DELICIOUS donut recipe with you. First, because of DONUTS, and second because of champagne! Sweet donuts with a little pop, it’s the best!
Did you get anything cool for Christmas?
I got a wedding band, four years later ha ha We couldn’t find one that fit when we got married so I just got married with my engagement ring. Stupid people ask me all the time “Are you married or engaged?”
Well not stupid, it’s a legit question but it annoys the crap out of Mr. Hungry. Then, a while back I took my ring in for cleaning and found the perfect match, too bad Jared’s ruined the surprise by sending me confirmation emails even though Mr. Hungry told them not too. Oh well, whatchya gonna do, story of my life. The most fun part about Chrimstas was
having a kid around for the first time in, pretty much forever.
Although I wasn’t a huge fan of getting up at 6 am with him, he was pretty adorable opening all his presents! He is two, so he doesn’t totally understand what’s going on, which is even better. Just young enough to not be annoying about it, just old enough to be fun!
What are your plans for New Year’s Eve, I always feel like it sneaks up way to fast. Like, the holidays are over and you expect a bit more recovery from them like the time between Thanksgiving to Christmas, but then BAM New Years is here.
Mr. Hungry and I are always in a scramble to figure out what we are doing. Where did we get invited? What’s going on? What do we want to do? Should we invite people over? This year, none of that.
My butt will be planted on my couch watching a marathon of mindless TV shows. I’m usually a fan of welcoming the New Year with chaos, but this year I just want all the fun appetizers and a date night in with the hubby. I can hear my younger self-screaming, OH my GAWD I’m so OLD/LAME. ha ha OH WELL younger self, I win.
I can’t wait to be thirty so I can pretend like it’s because I’m old ha ha so there is that! Alright, I’m off to spend the last day with the fam! You, get yourself a mini donut maker (mine was only like $12 bucks) and make some mini donuts for a party or your mini party, these are delicious either way!
Champagne Mini Donuts

Champagne Mini Donuts
Ingredients
- 1/3 cup champagne
- 1/3 cup almond butter
- 1 egg
- 2/3 cup tapioca starch
- ½ cup coconut sugar
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- 2 tablespoons coconut flour
Instructions
- Combine all ingredients and make mini donuts. Pour batter by the tablespoonful into the mini donut holes and follow directions on mini donut iron to make donuts, mine took 2-3 minutes for each batch! Serve hot or cold!

Funny, my mom got her wedding ring on her wedding day but her engagement ring 10 years later. My dad couldn’t afford what he wanted to get her when they got engaged so they waited until he could get her the one of her dreams. Anyway, those donuts look so pretty and fun! Hope you had a great holiday and will have a great new years.
