How was your Easter? Or how was your weekend (if you don’t celebrate Easter)?
We had a pretty nice weekend indeed! Minus the whole getting up for mass at 5 am thing, we chose the 6 am mass because we be crazy. We took a little nap when we got home but then needed to take little miss Nala on a walk before our guests arrived.
I cleaned up the house and prepared the last few dishes while Mr. Hungry went to go pick up his Grandma. On the menu?
- Hot dogs
- Mini Ham (we only made a quarter)
- Healthy Deviled Eggs
- Bacon Broccoli Slaw (without the bacon)
- Scallop Potatoes & Butternut Squash Gratin – boxes from TJs
I put out the healthy deviled eggs along with a few snacky foods on a serving platter. The snacky foods included TJ’s gluten-free pretzels, green and black olives, carrots, and trail mix.
Everyone enjoyed the meal, and we all ended up eating hot dogs instead of ham! But, Mr. Hungry took the leftover ham for his lunches so it worked out just as we planned.
But the BEST part of the meal was DEFINITELY the CARROT CAKE. Which, you guys, it was amazing and I forgot to take a picture. There were so many good opportunities and I was too busy eating it! I asked mom to take a picture of the pieces I sent home with her, luckily she still had them!
We ended up getting the cake from AJ’s Fine Foods grocery store. For those of you not local to AZ, it’s kind of like a Whole Foods meets a gourmet boutique. Here is a picture off of their website, SO MUCH FROSTING!
Then we hung out and played cards until Mr. Hungry took his Grandma home. Then, we ate another round of hot dogs and broccoli slaw while watching Harry Potter. I decided it would be fun to rewatch all the movies so we watched the first two last weekend, so far it seems like it was a good decision. There is so much I don’t remember! Mr. Hungry wanted to watch Lord of the Rings, ha ha ha um, no, strong veto! ha ha

That is an amazing looking carrot cake! I was sick on Easter, but we had lots of fun Friday and Saturday.

I love the part where you watched Harry Potter movies!! I made the Pumpkin Seed bars as a dessert or side for Easter and not one was left. My sister asked for the recipe!

Weekend was great…not as eventful. Harry Potter sounds like a plan, will definitely do it next weekend.
