This cabbage pizza will be your new favorite way to eat cabbage! While it's technically a low-carb pizza, it's best thought of as a delicious and affordable veggie side dish!
When I saw this on social, I knew I had to try it! While it was being promoted as a low-carb pizza, I knew it could never be that. I was more curious if it could be a good way to eat this really affordable vegetable. A head of cabbage is usually less than two bucks, but, other than throwing it in with corn beef, I don't eat cabbage a lot. And if I need shredded cabbage for something like my egg roll in a bowl or healthy coleslaw, I'm almost always going to spend a little more to get the pre-shredded stuff. So, cabbage pizza intrigued me because it's simple to prepare this veggie in its most affordable form.
Results? Mr. Hungry said it was the worst thing he had ever had in his life and to never make it again. However, my sitter and I, along with baby girl, really loved it, so I'm posting it anyway. Of course, the boys wouldn't get anywhere near it. I'm definitely not promoting it as a low-carb pizza substitute, though. Again, I like to think of it as a veggie side dish that would go well with a pasta meal that lacks veggies or chicken sausage. Let me know if you try it!
How to Make Cabbage Pizza

Slice your cabbage into six slices, even as many slices as possible, and then you'll roast them! Like any other veggie, brush with oil and add salt and pepper. Once they are roasted, they will be slightly tender. Add sauce, cheese, and desired toppings, then return to the oven to allow the cheese to melt and become bubbly. That's it! Pretty easy and hands-off for such a fun way to eat veggies!
Swaps and Substitutions
This recipe is gluten-free and vegetarian as is. A few swaps and substitution ideas are below!
- Cabbage - you could use purple or green cabbage! I also feel like this would work with cauliflower steaks, but I haven't tried it!
- Sauce - I used red sauce, but it would work with alfredo or pesto too! You could also do enchilada sauce!
- Cheese - I used mozzarella, but you could use whatever you have that goes with the sauce you are using. You can also use your favorite dairy-free cheese as well!
- Toppings - I used pepperoni, but again, feel free to change it up! Fresh basil is always nice on pizza-flavored things!
Combination Ideas for Cabbage Pizza:
- Pesto + Italian Cheese Blend + sun-dried tomatoes
- Alfredo + Mozzarella + Fresh Basil
- Enchilada sauce + Mexican cheese + black olives + green onion toppings
How to Store and Freeze
To store cabbage pizza: Allow it to cool completely and then place it in an airtight container for up to 5 days. Reheat in the microwave or the reheat mode in the air fryer would be a good option. I just microwaved mine!
To freeze cabbage pizza: Don't do it. I really don't think the texture will be worth it. The cabbage will get so mushy! If you try it anyway, let me know how it goes!

- Preheat oven to 400F. Line a sheet pan with parchment paper and spray with cooking oil.
- Slide cabbage into six even as possible pieces and arrange on the sheet pan. Brush with oil (olive oil) and sprinkle with salt, pepper, and italian seasonings.
- Roast cabbage for 20-25 minutes until fork tender.
- Remove cabbage from the oven and turn up to broil. Add sauce, then cheese, and toppings. Return cabbage to oven for about 5-7 minutes until cheese is melty, golden brown, and bubbly on top! Stay close so it doesn't burn!
