Cabbage Pizza

This cabbage pizza will be your new favorite way to eat cabbage! While it's technically a low-carb pizza, it's best thought of as a delicious and affordable veggie side dish!

Ingredients

  • 1 head cabbage
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 2 tsps italian seasonings
  • 1 cup marinara or pizza sauce
  • 1.5 cup mozzarella, grated
  • 24 pepperoni slices

Instructions

  • Preheat oven to 400F. Line a sheet pan with parchment paper and spray with cooking oil.
  • Slide cabbage into six even as possible pieces and arrange on the sheet pan. Brush with oil (olive oil) and sprinkle with salt, pepper, and italian seasonings.

  • Roast cabbage for 20-25 minutes until fork tender.
  • Remove cabbage from the oven and turn up to broil. Add sauce, then cheese, and toppings. Return cabbage to oven for about 5-7 minutes until cheese is melty, golden brown, and bubbly on top! Stay close so it doesn't burn!
