The last time I posted weeknight dinners, it seemed like a hit! I got a couple of comments and a bunch of DMs saying you guys loved it! Unfortunately, I couldn't record a week straight of meals, so this is two weeks combined. Either way, it's seven meals we ate for dinner in October that might inspire your meal plan! I'd love to know what meals you loved making in October, leave a comment and share with us!

Meal #1 -Air Fryer Salmon
I just realized this meal made a debut last time too! It's a monthly favorite in our house! What was different was I was trying out a "serve yourself" at the table approach, which was nice but didn't last. It's a lot of work to bring all that food over to the table! So, instead, I started letting KJ plate his food in the kitchen. That way, he is still involved but, it isn't so much work for me! (Think all the extra serving dishes that you need to plate and then wash. No, thank you.)
Served with roasted butternut squash (TJ's was out of the butternut squash fries, it was a whole thing) and wild rice.
Meal #2 - Mediterranean Pizzas
I was getting sick of our go-to dairy-free meals, so I scanned my hungry hobby recipe index using the filter for dairy-free and remembered how much I loved eating my Mediterranean Pizzas when I was dairy-free when nursing KJ two years ago. Unfortunately, trader Joe's was out of brown rice tortillas, so I used Lavish Bread which felt even more glamorous and delicious!
Meal #3- Air Fryer Fish and Chips
Also known as Costco frozen panko shrimp, Trader Joe's frozen fish sticks, and Alexa sweet potato fries. We snacked on some veggies and hummus while it was cooking, I swear we did! haha Not all meals are perfect in our family, and if this doesn't illustrate life with young kids, I don't know what does. This was, however, our "Friday night" fun meal.
Meal #4 - Smashburger
And Saturday night, after the kids went to bed, called for a Smashburger pickuporder! I got mine bunless because I prefer to "spend" my carbs on all the french fries. (I follow the same advice I coach my clients to pick one place to enjoy their carbs.) So yes, that's twice in one week we had fried sweet potatoes, and I'm not mad about it!
Meal #5 - Costco Street Tacos & Taco Cauliflower Rice
Who doesn't grab ready-to-eat food when they are at Costco? After a big Costco trip (see my Costco favorites list here), the last thing I want to do is cook! I love their street tacos, but I had to swap the cilantro crema with guacamole since I'm dairy-free. I also whipped up a quick batch of my favorite "taco cauliflower rice," which is cauliflower rice with a bunch of salt and taco seasoning on it. It's one of my favorite veggies to add along side a Mexican food-themed meal!
Meal #6 - Chicken Shwarma Plate
Another repeat from last month's dinner post, but with a less fancy salad this time! We grilled some chicken shawarma with marinated Butcher Box chicken thighs and breasts. We ate it with cucumbers tossed with Trader Joe's dairy-free Tzaziki, almond flour crackers, and hummus.
Meal #7 - Spicy Pork Ramen
This recipe was new to me and easily one of my favorite of the week! We weren't feeling the best over here, so I felt some soup would do the trick! I used this recipe from The Flavors of Kitchen for Spicy Pork Ramen using ground pork, and it came out GREAT! Mr. Hungry said it was "professional," and now I have all the essential ingredients, so I feel like this will become a staple in our house with ground pork! PS I cut the spicy level in half when making the pork, then added some extra chili garlic sauce to my bowl later! Highly recommend it, it was DELICIOUS! (We omitted the mushrooms, was still delicious!)
That's it! The pictures aren't fancy, but that's real life! Most of our dinners take 30 minutes or less to make, and we eat early with KJ at around 5:30 PM (I know, it's insane, but family dinners are important to us. Even if KJ takes 3 bites and asks to go to take a bath, it's the principle.) That's life right now! I'd love to know what you made last month you loved!
