Hi, friends! Today I’m popping in with a fun post! If you are like me, you’re always looking for dinner ideas to help you stay out of a rut. I LOVE our go-to healthy dinner recipes we make again and again, but I can be guilty of making them too much. I got the idea for this post because it’s similar to a series that one of my favorite bloggers does, and it always gives me ideas for recipes to incorporate into our meal plan. So, last week I snapped a picture of all the dinners I made last week! Let me know if you like this type of post, and I’ll keep it around! Also, keep in mind meals are slightly different now since I’m dairy-free due to nursing a dairy-free baby (KK also has MSPI like KJ.)

Barbacoa Tacos
This Frontera Barbacoa Meat caught my eye last time I went to Costco (see my go-to Costco shopping here), so I decided to give it a try! I love Frontera sauces, and I’m a sucker for pre-prepared food items that make the weeknight dinner come together quicker.
I topped my taco with Forager Project sour cream, guac, salsa, and Siete chickpea tortillas. Pair those tacos with some mini sweet peppers for an easy dinner!
Chimichurri Chicken Thighs
I used the chimichurri sauce that came in our last Hungryroot box (I’m working on a video I filmed of it, but see my full review here) to make chicken thighs. I followed the same method I use when I make chimichurri chicken thighs with a homemade chimichurri sauce. First, I pan-seared the chicken thighs on each side for a few minutes in a cast iron pan, then stuck the whole pan in the oven at 375 for 45 minutes.
We paired our chicken thighs with green beans made in the air fryer and seeds of change 90-second rice mix.
In and Out
One night I picked up In and Out on my way home from getting my hair done! I got a double meat protein style burger (no cheese) and well-done fries. KJ ate about 90% of my fries though! Not sure why I didn’t think to get him his own!
Air Fryer Salmon
I made salmon in the air fryer using the recipe from my skinnytaste air fryer cookbook, which is the only way I cook salmon nowadays because it’s the only way I can get both Mr. Hungry and KJ to eat salmon! They gobbled it up! We had some random pairings to go with it. One side was Cappello’s Almond Flour Sweet Potato Gnocchi, a Path of Life Blend, and some cauliflower rice (seasoned with garlic salt.) I’ll definitely be getting more of the sweet potato gnocchi at Sprouts. It was DELICIOUS! I pan-fried it in Myokos vegan butter, seriously lick the plate good.
Chicken Shawarma Plates
This isn’t really a weeknight dinner as we made it and ate it on the weekend, but we ended up eating the leftovers for dinner during the week. Either way, I’m throwing it on here! We grilled some chicken breast marinated in my chicken shawarma marinade for 24 hours. We paired it with a big salad with primal kitchen greek vinaigrette, dairy-free tzatziki (thank you, TJ’s!), tabbouleh (also from Trader Joes), and a whole-wheat pita.
Let me know what you think of this type of post. If you like it, I will schedule more! Next time, I thought I could also add pictures of what KJ was served for a meal (maybe with before and afters of what he was served vs. what he ate.) For instance, during this week, KJ happily ate the chimichurri chicken, the air fryer salmon, and the shawarma but was also served the same sides with veggies and didn’t touch them. Unless you count the tomatoes, he squishes with his fingers all over the table, haha.
