Hello Everyone, I hope you had a great weekend! Mine was full of studying over here, but I did get to spend a few hours with family and friends so that made me happy.
PS this game is our official “initiation game.” When Paul and I first started dating I went over to his parents house for game night. They chose imagine IF as the first game we played which is extremely awkward if you don’t know any of the people you are playing with AND trying to make a good impression. (The game consist of picking a card and guessing what someone would be based on the cards choices. For example, imagine IF Kelli was a doll which would she be?) Now if you are new to game night, we play imagine IF first! Sick and twisted I know. ha ha
Anyways shopping this week was done at TJ’s of course.

–The Very Popular… Moni’s “Healthy” Quinoa Mac and Cheese I prepped on Saturday:
I didn’t change much except I was very liberal with the cheese, used tomatoes instead of bell peppers, and added in a handful of spinach to the mix just before baking.
-Almond Butter and Banana/Jelly Sandwiches to satisfy my inner child.
-Turkey Wraps/Sandwiches or Salad
Dinner Plans:
Sunday and Monday- Cheesy Chicken Sausage, Leeks, Brussel Sprouts, and Butternut Squash.

I followed her recipe by sautéing the chicken sausage first, but instead I used the whole 12 oz instead of 6oz of chicken sausage. Then I added in one chopped leek with the Brussels sprouts and steamed that with the pan lid on for about 6 minutes. After mixing it all together with the laughing cow garlic and herb light cheese wedges, I chopped and added in two quarters (or 1/2) of the butternut squash I prepped on Saturday.
Her 3 Ingredient Meal became my 5 Ingredient Meal. Still super easy though! Makes four servings with my changes.
Tuesday and Wednesday (to be prepped Monday night)- turkey lentil meatloaf and cauliflower mash potatoes.
Thursday– Mahi Mahi Burgers
Friday– Chile Verde Shrimp
Saturday-– Wing it
A Note: I almost NEVER use bread crumbs in a recipe. If a recipe calls for bread crumbs I take that to mean rolled oats. Or, if it’s for a bread crumb topping I use a mix of ground flax seed and bread crumbs, ground flax and oats, or just ground flax. Using flax is a good way to sneak in those anti-inflammatory healthy omega 3’s without anyone knowing the difference.
Confession: I’ve been buying too much food and prepping too much. I guess I thought Paul eats more than he does? I mean I know he is 6’2″ but I guess I was overestimating his hunger a bit. So, I’m working on scaling down a bit.
Workout Plans
Sunday– 4.5 miles
This morning I started running on the treadmill and realized I definitely should have given myself one more rest day. About half way through I was super sweaty and all of a sudden SUPER COLD, hello fever didn’t know you were still hanging around. I thought I should probably get off but then I thought, your already here might as well finish it out, so that’s what I did even though I was freezing and dripping sweat. The workout was definitely a good one, it went like this:
Monday– Strength Training Class
Tuesday– Circuit Training (ST/CT)
Wednesday– 4.5 Miles
Thursday– REST
Friday– 9 Miles (or maybe we should just say long run, seeing as how the last few have been rocky)
Saturday– Strength Train Class
I am a little nervous about fitting it all in this week with studying, orientation for work, and wedding stuff. Being realistic, I am prioritizing studying and sleeping, thats just the way it has to be! Hope everyone has a good week! I’ll be around I have a couple recipes I can’t wait to share!
