Cashew & Date Healthy Coffee Creamer is so easy to make from just three ingredients and so full of nutrition it can turn your morning cup of joe into a real health food!
Hi Friends! I’ve been wanting to share this one with you for a while now! I got the idea from my chiropractor months ago and had been thinking about it ever since he mentioned it! It’s so so simple and so so delicious! I figured with our theme of upgrading your coffee creamer for this weeks healthy habit, now would be a great time to finally share it!
Check it out, all you have to do is take a 1/2 cup of cashews (I used salted but you can use whatever) and a few dates, cover with water (about a cup) in a jar and soak overnight. You’ll notice the cashews and dates will kind of “soak up” the water and get bigger.
Drain the water and add to a blender with 1/2 cup of fresh water and a pinch of salt. You just blend it up for about one minute or until creamy, try not to let it get hot!
You can use it right then but if you let it cool in the fridge overnight it will get a bit thicker and creamier. You can change the ratio and add more or less dates, depending on how sweet you like things. You can also add a few stevia drops if it isn’t quite sweet enough for you.
Why would you want to make a coffee creamer from cashews? Well, I have nothing against good old half and half, but whether you are choosing to consume dairy or not, cashews have a lot to offer.
They don’t get as much fan fair as some other nuts (mostly because they are technically a seed), but they are super rich in hearty healthy monounsaturated fats. They are also rich in many minerals including magnesium which is estimated to be a part of 300+ metabolic reactions in the body.
Magnesium is something I regularly coach my Hungry Hobby RD clients to get more of as it directly helps improve digestion and keep stress at bay! Dates are equally as nutritious and provide a rich caramel sweetness that perfectly complements to the slightly nutty cream. Have I convinced you that you need to try this yet? ??? You definitely do!

Cashew & Date Healthy Coffee Creamer- Vegan/Paleo
Ingredients
- 1/2 cup cashews
- 3-5 pitted medjool dates depending on sweetness preference
- 1.5 cup water divided 1 and 1/2
- 1/8 tsp salt
Instructions
- Soak cashews and dates in 1 cup water overnight (or at least 10 hours).
- Pour out water, add soaked cashews and dates with 1/2 cup fresh water to blender. Add 1/8tsp salt (just a pinch) and stevia drops if desired.
- Blend for one minute on high until creamy. Chill in fridge overnight for best results. Good for 5-7 days in an airtight container in the refrigerator.

I promise it’s super easy and once it’s ready just stir it in your coffee or tea for a healthy nutrient packed coffee creamer! I’ve been using it in my tea since I’m going without coffee for a while (luckily I took these photos a couple of weeks ago) and I use this as a topping for fresh berries or fruit which is quite literally divine! That’s a great question!!!! It should be good for 3-5 days, but mine kept a full week. Keep it in a sealed container in the coldest part of your fridge!

next time try adding a little more water to the mix and blending it up again before you add it to your coffee just like I did in the video!

Thank you for posting this it is super tasty and I love that it is all natural I have been looking for something natural to answer my coffee and tea without all the hydrogenated oil’s oils and other junk! The only thing I found was I needed a cup and a half of water after I drained the water from the cashews and dates. When I used a half a cup I got something the consistency of peanut butter. Otherwise this is delicious
