Happy Taco Quesadilla Tuesday Friends! So quick little update before today’s delicious eggalicious recipe, this weekends knee pain was due to a lovely knot in my quad.  My chiropractor needled it, which hurt, but a couple of hours later I felt like a million bucks!
I thought about taking a picture, but I thought maybe you guys didn’t want to see needles sticking out of my quad?  Next time….  I’ll be sure to share!  Anyways I took today off because you aren’t supposed to work out after dry needling.  So that has been a rest day on Friday, Saturday and today, I’m ready to get back at it!  At least I’ll be well rested for my half!?!? This weekend… dun dun dun….
Okay now onto last week’s adventures in quiche making.  I think I mentioned that every time I want eggs in the morning I think about the dishes, I’d have to dirty and then I think I should just make a quiche or egg muffins.  That way I cook once and do dishes once and eat many many times.
Especially when I’m thinking of adding veggies to it, if I’m going to prep veggies to put in eggs I want to get more meals out of my effort!  I love starting the day with veggies, though, it just starts things off on the right foot ya know?  Cook once, clean once, eat many many times, that’s my mantra!
So I whipped together this Quiche and ate it all week for all kinds of meals including breakfast, lunch and a snack. Â Then I came up with a brilliant idea, make it into a quesadilla! Â I had one piece, or 1/4 of the Quiche left. Â I used half of a half in two different quesadillas. Â A
ll I did was cut it up, sprinkle on some cheese and grill up the quesadilla (oh and added a bunch of Chula sauce per usual.) Â I used my favorite low carb LTF quesadillas(they were at Costco), but use whatever your favorite is! Â We also likeLTF gluten free and Siete Family Tortillas (tend to be a bit more delicate). Â You could even do mini corn tortillas too!
Zucchini Quiche Breakfast Quesadilla
Ingredients
- 3 eggs
- 2 cups liquid egg whites
- 2 large zucchini shredded and squeezed dry
- 1 tsp garlic
Instructions
- Preheat oven to 350F
- Whisk all ingredients together in a small bowl, add to a greased 8x8 baking dish.
- Bake for 35-45 minutes until eggs are set, let stand for 5-10 minutes.
- FOR QUESADILLA: Fill tortilla with 1/8 of chopped quiche (1/2 of a serving) and 2T of shredded cheese. Pan fry turning every 1-2 minutes until tortilla is crispy and cheese is melted.
For 1/4 of Quiche:
(Nutrition stats vary with quesadilla depending on the type of tortilla used and the amount of quiche added.)
Yum yum, go ahead and treat yo self to this weekend breakfast made for the crazy work week!
