Tomato Zucchini Turkey Sausage Frittata
I made this recipe on Sunday morning and it was a big hit with both Paul and I. It’s lightened up by using egg whites and turkey sausage, plus packed with tons of veggies so it’s a healthy way to start your morning.

Ingredients
- 1 Tbsp Olive Oil
- 1 medium onion, chopped
- 2 medium zucchini, cut in half and then chopped into slices
- 4 large eggs
- 1 cup egg whites
- ¼ cup plain non-fat Greek yogurt
- ¼ cup Parmesan cheese
- ¼ cup pepper jack
- Garlic salt and pepper
- 2 medium roma tomatoes, sliced
- 6 turkey sausages, chopped (feel free to omit if vegetarian)
Directions:
1. Preheat oven to 400F
2. Sauté onion until golden brown on medium high in medium 10 inch skillet.
Add zucchini, and increase heat to medium high, season with garlic salt and pepper and cook 2 to 3 minutes or until moisture dries up, stirring occasionally.
Remove pan from heat.
3. In a medium bowl, whisk together eggs, egg whites, Greek yogurt and cheeses
4. Pour egg mix over zucchini, lifting zucchini to allow egg mixture to coat the bottom of the pan. Top with chopped turkey sausage
followed by sliced tomatoes..
Return pan to heat and cook 5-10 minutes until edges are set but center is slightly runny.
5. Place frittata in oven and cook 15-20 minutes until frittata is completely set and slightly brown on top. Let cool slightly before serving.
Serving = 1/4 of Frittata, Per Serving: Calories 391, Fat 24g, CHO 11g, Protein 39g
*Note: If sodium content is a concern for you, try using 4 egg whites (from eggs not an egg white carton) and omitting the turkey sausage.
7 Mile Run
On Saturday I did my long run and it was a good one, best I’ve had in a while! Don’t get me wrong, it was still hard (running is always hard for me) but I had good energy and my legs didn’t feel like death like last weekend, so I think that was a win!

Total Time 1:04:52, Average Pace 9:15/mile. I logged this run in my new miles chart I made after seeing one at Chocolate Covered Race Medals. I loved this idea because although my Nike Trainer keeps track of all my outside runs, I don’t wear it when I’m on the treadmill. I’m pretty sure I will like seeing all the miles I put into the year totaled up!
I was pretty happy with my time, but unfortunately I can’t say that the run was all good. Towards the end my hip started to bother me. I had hip problems in September and October which completely resolved when I got new shoes. On Sunday I woke up pretty sore in the hips which made me very nervous. So, I headed off to the running store to see about the inserts I had (my shoes are still too new to be replaced, they only have about 200 miles on them). They made me new custom inserts and switched them out with my old ones FOR FREE! Then, instead of pushing it I went for a 3 mile walk. I thought I would be SUPER bored walking, but I actually kind of enjoyed it and found it peaceful. So hopefully the inserts will fix the problem and I’ll be running pain free this week.
Now I’m off to work where I will be enjoying some leftover frittata for breakfast! Have a good one everyone!
