As always, T.G.I.F in every way possible. I am especially looking forward to a date night with my Paul, we splurged at Costco and got crab legs (which we plan to make drunken crab legs with using this recipe.) Let you know how it goes!
Yesterday started out with some green juice, I feel like I should be drinking three glasses a day with all the sick people I’m around. Luckily though, even just one glass does the trick as far as keeping your immune system on high alert.
Wednesday night I cooked up a single serve loaded berries pancake and packed it like this:
Pancake Ingredients(GF,paleo,vegetarian,low carb):
1T flax, 1 egg, 1/3 egg white, 1T Walden Farms Blueberry Syrup, 3/4 Mashed Banana, and 1 tsp cinnamon.
Directions:
1. Mash banana throughly then add in all remaining ingredients and whisk with a fork. Poor entire batch onto cool skillet, place on medium heat and let pancake heat up with the pan.
2. When pancake is mostly set, attempt to flip. Mine kind of fell apart and turned into two halves, but some days I get it to flip all the way.
3. Top with nuts, nut butter, syrup, fruit… whatever you want!
Packed with the rest of the banana, blackberries, and 1 weighed out tablespoon of nut butter. (See why the kitchen scale can be your best weight control tool here.)
When I got to work I took out the banana and sun butter and heated the pancake with the berries. This made a nice appetizing natural syrup that was delicious with the rest of banana and sun butter.
I spent the morning working away and trying to ignore my throbbing hip. Around lunchtime I really couldn’t ignore it anymore… it was sore to stand or sit but not walk. So after quickly devouring some of last nights leftovers (sorry almost forgot to take a picture so it isn’t very pretty but it tasted good) I went for a walk during the rest of my 40 minutes I had for lunch.
I wasn’t sure if the walk was going to make things better or worse but it was nice to get outside.
It was kind of weird too because I actually grew up right by where I work, so walking around the old neighborhood set kind of a nostalgic tone.
It had to have been 70 degrees out, but you’d think the way people in AZ dress it’s 40. (Yes I’m one of those people.) For a little while after the walk my hip felt better, but slowly the throbbing set in again. It was clear that my body is rebelling so cross fit was out of the question. So I made use of the extra time and went on a Costco run with Paul after work. I was feeling kind of sad about not being able to workout and I was not in the mood to cook, so after I washed and put away all the produce (grapes, blackberries, and raspberries) I whipped up a green smoothie for dinner. I put it in my cool new mason jar mug I got from the dollar store! So trendy and so cheap, double awesomeness!
(GF,vegan,vegetarian,grain free)
Ingredients:
- 1/2 cup frozen banana
- 1/2 cup blackberries
- 1 scoop chocolate protein powder
- 1 cup unsweetened vanilla almond milk
- 1/2T sun butter
- 1 tsp cinnamon
- 3 cups spinach
- 1/2 cup ice
Lots of 20 min on/20 min off icing followed by icy hot for the rest of Thursday night and probably tonight too. I’m also hoping to get into my chiropractor to see if he can shed some light on the situation. So for now I’m sidelined which of course is not fun, but life is a journey we often do not control so instead of moping about it I’ll turn it into something positive. I’ll make use of the extra time I have and hope that I’m healed up by the end of the weekend! If there is one thing I’ve learned from reading tons of stuff about longevity (including the Blue Zones book which I highly recommend) its that you have to enjoy life or you won’t keep on living it.
