Last nights dinner (and the night before’s dinner and today’s lunch… cook once eat all week thats my motto) was so easy to make and so delicious I just had to share it, so here it goes!
I started with green salsa and 6 corn tortillas
The first layer I added was a can of refried black beans from TJ’s
Followed by a container of reduced guilt guacamole from TJ’s (no picture because this is where I stuck it back in the fridge and went for a run) and then layered it with sauteed bell peppers (about a cup frozen), 1/2 white onion chopped, and 3-4 cups of baby spinach.
Next up I added lots of defrosted shrimp
Then I topped the mixture with a 1/2 jar of salsa and 1/2 can of green chiles
The final toppings included 6 more corn tortillas, 1/4 cup of black olives, 2 green onions and CHEESE (fontina). I covered it with foil and stuck in the oven on 350F for about 30 minutes, then I removed the foil baked for another 5-10 minutes until the edges were brown and the cheese was bubbly.
