Where did Monday go? Monday was so busy I feel like I barely took a deep breath in. I got to the office around 7am and caught up on email etc until I had breakfast. I packed a flour-less pancake (1 egg, 1/3 cup egg whites, 1 banana, 1 T ground flax) with peanut butter and pumpkin butter that I made Sunday night during my weekend food prep.
I have to say I was thinking that it was too big of a breakfast, but I’m glad I had it because it held me over till 145pm when I finally got a minute to take a 10 minute lunch and have a salad. Again I was thinking I put too much in my salad, but when I finally ate I was happy that I had a few little extras. You can’t really see it but it had dried cranberries, goat cheese, sweet potato, pumpkin seeds, and deli turkey with calorie free balsamic vinaigrette.
I also had a bag of carrots that looked like this one from last week, but I forgot to take a picture.
Why don’t mini crisis situations every happen at 2pm when I have a solid two hours to solve them? Why is it always 4pm when I’m trying to leave in 30 minutes because I’ve been there for 9 hours? Anyway, I ate the pear I packed on commute home at 4:30pm.
When I got home I changed and got ready for a run with Paul. While I waited for him to get off work I started dinner. I made a Shrimp and Black Bean Mexican Lasagna and it was delicious (recipe to come)!
First we knocked out an easy 5 mile run. Well, easy for me, while Paul may have smoked me in the 12K’s of Christmas Racewithout ANY training, he is definitely feeling the aftermath now! We finished in 46:40 for an average pace of 9:19 according to Nike Trainer. The weather was super nice and it was nice to have my hubby as a running buddy! However, that being said, I still prefer to run in the morning… but I was kind of afraid we wouldn’t have hot water since our apartment complex has been having problems, so I didn’t want to risk it. I know cry you a river it’s the classic broke newly weds tiny apartment story….
After we got back I finished up dinner and stuck it in the oven. We didn’t end up eating till later which means I may have done a lot of snacking on those cinnamon almonds from Sunday… whoops!
In other news the advent jar refuses to give me an excuse to get my favorite Starbucks holiday drink, instead, Sunday night we got buy an ornament. We walked over to Walgreens and got this sweet little angel that changes colors for $2 bucks!
