First, I have to say I just learned about the horrific events that occurred in Vegas right before I started finishing up this post this morning. I’m incredibly saddened by the events that occurred, and I definitely considered not posting this recipe.
However, just like many of you still went off to your jobs this morning, I too continue to work. I also have to say it makes me even sadder to post an intro like this for what seems like the millionth time in the last few months.
Between hate attacks and natural disasters, this country continues to be tested and I continue to be amazed by the ability of people to show kindness and pull together. It gives me hope and faith to see that kind of response. My heart still aches for Vegas, and my prayers will be with you.
These pancakes are a version of the most popular recipe on my blog, coconut flour pancakes! It’s no wonder they are so popular. They are easy to whip up in the blender and incredibly healthy! I know I know, let’s get the elephant out of the room, it’s not even close to a one-dish recipe I usually post on Mondays, but I just HAD to share them now!
I couldn’t wait until later on in the season it had to be now, you feel me? Once you make these, you will understand! Speaking of one dish Mondays, I’m going to table them for a while because I have a ton of fun fall events to look forward to.
This weekend I’ve got a baby shower AND a bridal shower to go to, plus I’ll be hanging out with my in-laws all weekend. That is if I survive my root canal without anesthesia this week. Then I’ve got another bachelorette party and then the Food and Nutrition Conference in Chicago after that.
The last weekend in October will be dedicated to celebrating Megan’s birthday and getting ready for guests. Then we have a wedding and then the next week guests start to arrive around our anniversary. In other words, I’ve got some super fun weekends up ahead, and I think it would be fun to bring back weekend recaps.
Recently, I’ve been missing doing weekend recaps. I got sick of them a while back, and some of you said you weren’t really into them, so I got rid of them in favor of one dish Mondays. If you aren’t into them, no worries, I’ll still be posting 2-3 new recipes a week so you can always just skip over them, I won’t be offended. PS I couldn’t choose the BEST photos, so I’m just bombarding you with pictures of pancakes this morning, hope that’s okay! PSS I seriously would consider making a million of these and freezing them so you can have pancakes whenever you want, HIGHLY recommended but you do your thing I won’t judge!
Pumpkin Coconut Flour Pancakes

Pumpkin Coconut Flour Pancakes
Ingredients
- 3 eggs
- ½ cup egg whites
- ½ cup pumpkin canned not pumpkin pie filling
- 2 tablespoons maple syrup
- ½ teaspoon pumpkin pie spice
- ¼ cup coconut flour
- 1/4 teaspoon baking powder
- garnish: pumpkin seeds
- syrup: creamy almond butter or nut butter
Instructions
- Blend all ingredients in a blender (eggs, egg whites, pumpkin, pumpkin spice, maple syrup, coconut flour.)
- Heat a greased griddle or large skillet on low to medium heat. You can use egg rings or just free hand them. I used these egg rings and added ¼ cup batter to each ring. I set a timer and removed the egg ring after 1 minute, then flipped them after two minutes. Flip pancake when almost completely set.

I noticed that the “Pumpkin Coconut Flour Pancakes” do not call for “baking powder” but your plain “Coconut Flour Pancakes” do call for “baking powder.” Is this an error of omission from the Pumpkin recipe or not? Thank you.

It works either way, I’ve tried it both ways, however, I meant to include the recipe with the baking powder so they are bit fluffier! Thanks for catching that, I’ve updated the recipe!
