Good Evening, I can’t believe the sun is already down again since I’ve been out and about since before it came up! Proof:
Too reward myself for going in early I stopped at Starbucks and got something that I never ever ever let myself have because it’s so high calorie… I mean I don’t when the last time was I had it… could easily have been 5 years ago (freshman year of college?)….anyways I got a WHITE CHOCOLATE MOCHA (triple, nonfat, no whip, 2 pumps takes this normal 470 Calories–> 250 Calories). Still a little high Calorie for a drink, but When the morning got a little crazy I took a little sip and was in heaven, it was perfect.
Coffee is good, but my stomach was grumbling by 7:45am so I went for a light breakfast of an egg white scramble with asparagus and mushrooms and some zucchini/squash. (Yep, those are two tater tots you see hiding on the side of my eggs, I see them every morning so I had to have a little taste!)
The first chance I got I do what I do every Monday morning and printed out the lunchtime menu. I quickly highlight or star options I may like, fold up the menu and keep in my lab coat pocket for the week. This isn’t a steadfast rule so much as preparation. For instance, today it was good to be prepared that there will be the smell of Asian food bursting from the cafeteria before I even walk in. So before I get to sucked in by egg roles and stir fry I know there are other healthier options I may like better. On the other hand, I was not prepared for the bake sale they were having in order to raise money for a home destroyed in the silverlight fire. Remembering how good the Starbucks treat I had in the morning kept me on track. (I still donated money though!)
Today I totally surprised myself and did not go for the chicken or the fish (and successfully avoided the asian express station), but instead, made a delicious and filling Mediterranean vegetarian salad. Once I saw the strawberry/red quinoa mix next to the garbanzo beans, I knew it was going to be salad day!
I topped my romaine lettuce with the strawberry red quinoa mix, garbanzo beans, tomatoes, cucumbers, and a sprinkle of feta and sunflower seeds. I used balsamic vinegar and balsamic vinaigrette for dressing, and grated some fresh ground black pepper on top too. I think I may have inspired other people to make a salad too because people kept looking down at my plate and saying how good it looked. It looked good and tasted even better, I will most definitely be recreating this at home sometime!
I didn’t go totally Meatless Monday because I threw some shrimp in with my dinner, but pretty close! Sometimes, I accidentally eat vegetarian and don’t know till I look back on the day, this just happen to be a Monday! Personally, even though I love my chicken and fish, I like the idea of eating meatless somedays as a way of getting in more plant based foods and helping out the environment.
