In a meal planning rut? In the past, I used to include what was on my meal planning, but nowadays I’m doing so much recipe development I hardly get the chance to remake anything. So, my meal plan ends up being a list of new recipes you won’t get until the following week or later, that isn’t helpful! So, I’ve decided to institute a Sunday series for your meal planning pleasure! It’s just five healthier dinner options to give you ideas on what to put on your meal plan! I’ve included one breakfast idea that you can easily meal prep and five dinner ideas. My thought is to use leftovers for lunch, happy Sunday meal prepping!
Breakfast Meal Prep Idea
Banana Walnut Quinoa Bars (GF, Vegetarian) + Easy Protein (yogurt, pre cooked sausage, or hard boiled eggs)
Dinner Meal Plan Inspiration
Stove Top or Slow Cooker Customizable Minestrone (Paleo, GF, Vegetarian Options)
Taco Tuesday? Sheet Pan Steak Fajitas
Meal planning tip: prep bell peppers and seasoning ahead of time!
serve with Spicy Guacamole!
Cauliflower Pizza Casserole
Meal prep tip: to make your life easier you can now buy pre-prepped cauliflower rice – something that wasn’t widespread available when I made this recipe originally!
Maple Mustard Pork Chops
Taco Tuna Sliders
Meal prep tip! Make the quinoa ahead of time (like when you make it for your banana walnut bars) and freeze it, or use within 3-5 days!

Amazing looking dishes! I love pork chops. Thanks for sharing your recipe. It doesn’t sound too hard. I have to try this version.
