Happy Monday friends! Let’s start the week off on a positive note, shall we? I mean, what’s more, positive than pancakes????? Apparently, nothing because pancakes are so good they have TWO national food holidays dedicated to them.
The first one is in February and is the IHOP National Pancake Day, for some reason, I feel like that one doesn’t really count. I mean, can one restaurant designate a food holiday? That’s really just a day to gorge yourself on pancakes for a good cause (whatever charity IHOP supports that year.) The second holiday is today, I feel like it’s more legit, but who am I to decide? I’m not the food police.
You know what I think is funny though? The fact that I actually don’t like regular pancakes. Like the traditional kind made with Bisquick batter or whatever? Ehhh, not for me, I feel like it tastes like soggy baking soda bread. Personally, I’m team waffle all the way.
I also understand that I’m the exception because most people LOVE pancakes. Mr. Hungry could probably live off of pancakes full-time.
It wasn’t until I started experimenting with pancakes made from healthier and heartier ingredients that I realized how great pancakes can be. (PS If you love them with traditional ingredients, check out this post: Are pancakes healthy? The answer might surprise you!) I typically prefer to top them with butter or some sort of nut butter and not maple syrup. Again, I know I’m the exception.
