Happy Friday everyone! I’m so happy it’s Friday because that means it is exactly one week till the wedding! This morning started off like almost every other morning at 6am with some green juice. The kale was a little wilted though so I got less juice from it. Kale is so bulky in the fridge there has to be a trick to storing it that I am not aware of!
After Paul left I got ready and made myself a grilled sun butter, pumpkin butter and banana sandwich and buttery caramel flavored coffee, it was pretty much better than a cookie, thats how good it was.
Ingredients:
– Eziekel Cinnamon Raisin Bread
– Sun Butter
– Pumpkin Butter
– 1/2 banana
I know you probably think that banana looks gross but keep it in the cripser and the outside turns brown and the inside is nice and firm like the first day you bought it. Okay moving on, I actually made this sandwich like two days ago to take with me to work and never ended up eating it. I thought it would make the perfect goey grilled breakfast sandwich ever and I was definitely right.
Directions:
1. Assemble your sandwich. I spread pumpkin butter on one piece of bread and sun butter on the other, then I stuck sliced banana in the middle.
2. Microwave sandwich for 20-40 seconds (depending on how cold it is, you just want to warm it up to room temp) while a non stick pan heats up (medium heat).
3. Spray pan with cooking spray and grill sandwich for 1-2 minutes on each side.
