Food
I discovered In and Out’s allergen menu and realized I could get a protein style burger with mustard and ketchup (no spread) and fries! It was AMAZING! PS we always get our fries “well done” it makes all the difference in delicious crispiness.
We stayed on the burger train on Sunday and grilled up some Butcher Box burgers. P.S. A tip for grilling your 100% grass fed burgers – treat them like steak. Grass-fed burgers are leaner than conventional meat burgers, so they cook faster!

And the Monday night we used the leftover asparagus and sweet potato I prepped over the weekend with Teton Waters 100% grass-fed hot dogs (from Costco.) PS Nala ate a whole sweet potato and half off the counter (insert face to palm emoji.)
I meal prepped my lunches this week with chipotle chicken from the marinade challenge with a simple salad of romaine lettuce, cherry tomatoes, and cucumbers. Anyone else feels a little uneasy when eating romaine after the double recall? I can’t help it, it’s my favorite greens because it’s nutrient dense yet still crunchy. I can’t help but feel like I’m living on the edge a little bit every time I eat it. As I type that I realize how lame it sounds, the riskiest thing I’ve done this week is to eat romaine lettuce. How about you?
I was seriously obsessed with my lunches this week, and I think it was for two reasons.
1) I figured out if you salt the avocado before adding it to the salad, it tastes SO MUCH better!
2) this stuff is DELICIOUS! I never thought I’d find a vegan/dairy free ranch I enjoyed but I did, I might actually even like it better!
Favorites
The first time I made TJ’s cauliflower gnocchi was a fail, it burned and was terrible. I found this post and tried it again, sadly I don’t have a picture but it was DELICIOUS! If you bought it, tried it, and hated it, try it again using her cooking suggestions!
Fitness
So this week felt a lot better on the workout front! My hand feels much better, but it still gets sore sometimes, I’m avoiding pushups and dips for now. I’m still loving using Aaptiv for my home treadmill runs!
The only downside is some of the runs are kind of long, and I don’t have an hour for a run. I might switch the program I’m doing from 10K training to 5K, we shall see because I also really want to increase my endurance so it’s a hard call!

Monday (3/25) – OFF – walk 40 minutes with Nala
Tuesday (3/26) – walk 30 minutes with Nala + 35-minute Aaptiv Interval run
Wednesday (3/27) – walk one hour with Nala + the workout below
I was really feeling a low impact but hard strength workout, this one did the trick! I was super sweaty by the end but without any high impact jumping!
Thursday (3/28) – OFF – walk 3o minutes with Nala
