It’s been a heck of a week over here. We had a pipe burst behind our master bath sink which damaged the drywall, floor, and vanity. There are giant fans that are super loud and super hot all the time. Not to mention the random men coming in and out to fix stuff, I got peed on and didn’t change my shirt till I went to bed because there were so many people going in and out of the master. So, needless to say, I had the first glass of wine I’ve had in two months, thank God that isn’t part of the elimination diet!
Food
Breakfast is the same just about every day, an oatmeal bake with sun butter. Plus coffee with oatmilk and 2 scoops ofcollagen. (What is collagen and how we use it in this post.) This week’s oatmeal bake had apples in it but it was kind of dry, I like the blueberry version so much better. I’ll be posting that recipe soon!
Lunches and dinners are always interchangeable since I often place the leftovers of whatever I make in meal prep containers. It just makes it that much easier to get a healthy meal during naptime or hectic nighttime pre-bedtime routine.
This plantain sausage mixture was from last week’s WTE? Meal Plan. This was the first time I’ve ever been successful at actually cooking sliced plantains. The secret? Low and slow! They need medium heat for a long time to cook up perfectly. I’m impatient so I tend to jack up the heat to quickly and then I just get uncooked burnt plantains. I paired it with roasted cauliflower for a full meal!
I found this recipe on the Banza website and modified it significantly, but that’s where I got the idea to combine these ingredients. I’m planning to make it again and share my modified version because we all loved it!
I was really starting to miss cheese when I saw that Daiya shredded cheese packers were on sale at Sprouts! I’m not eating a ton of it because it contains yeast extract. I’m not sure if the baby has an issue with yeast or not, but both Mr. Hungry and his sister have an issue with it so I’m trying to watch my intake.
I made a ham and Daiya cheese quesadillas with cassava coconut flour tortillas (which are also now available at Sprouts to for local AZ people!). And a side of hope original hummus and carrots, it was kind an ode to my pregnancy days when I had quesadillas ALL THE TIME!
And burrito bowls are also a win! This beef cauli rice bowl is limey and delicious. It was from this weeks WTE? Meal Plan!

Sunday (2/24) 3.0 Miles in 30 Minutes
I really wanted to do 3 miles in 30 minutes and I ALMOST did it. The last mile I had to do 50 seconds on and rest 10 seconds.
