This is where I get to share all my favorite things of the week, eats, and randomness. It’s my chance to connect with all of you so I’d love to hear from you!
From now on, every afternoon looks like this:
Nevermind the construction in the backyard. KJ and I are spending every afternoon in the pool since it’s supposed to reach 105F this week. Lucky for me, he LOVES the water. For six years, I taught level 1 swim lessons (the littlest kids you can teach), so I’ve had so much fun starting to teach him some stuff. He loves to be on his back (not normal, kids usually hate this), and he can kick with his legs straight to get a toy (while I hold him obvi.) He is my little fish!
So, my plan for this weekend is to bake a ton and play with my new toy. I have a bunch of eggs left that are on week 4 (I bought 150 at Costco and have 60 left), so they need to be used. Plus, I figure if I bake now, I can limit how much I turn on the oven for a while. The rest of the time we will be in the pool. That’s my plan, what’s yours? Catch me up, friends.

Cinco De Mayo Recipes
Guess what? My fourth favorite holiday is coming up! Followed by my birthday, America’s birthday and Memorial Day is Mexico’s birthday. AKA the best reason for American’s to eat Mexican food and drink Margaritas, and I’ll be right there with the best of them! I mean, the only alcohol I have left is a Costco size bottle of tequila, so it’s time to party, right?
Here is a massive HH Cinco De Mayo recipes round up! My favorite is my pork carnitas, but I’ll be making my instant pot beef carnitas for Mr.H.
(And if you think I’m selfish for having my birthday be my favorite holiday, that’s fine. I actually really like birthdays in general, including other people’s. I love to do things for them, make them food, and buy them things. Life is hard, life in quarantine is harder, and we should all celebrate living through the year. If you are one of those people who “don’t care about birthdays, you are looking at it as a loss of time instead of a celebration of time. You are important and should celebrate your life. Fourth of July and Memorial Day are times I get to celebrate the fact that I’m lucky enough to live in a free country, and no one has to buy gifts. So that’s why I like those.)

New video posted on all the places, including YouTube! These are my spicy tuna hummus cakes, and PS the baby did not like the version I made him, but we did!
Quarantine Food
It’s been 4.5 weeks since I went to the grocery store. FOUR AND A HALF WEEKS! Except now I need orange juice for the carnitas recipe, should I steal them off my neighbor’s tree in the middle of the night just to avoid the grocery store? JK I wouldn’t do that (wink wink.) That being said, here were the eats from the week (in no specific order.)
My SmoothieBox came! Happy Day! We only had one smoothie left! And then the blender fell off the leaning tower of dish rack dishes and snapped, another one is on its way though! Replacement = $90, UGH.
For breakfast, all week for the wee one, I tried this Pumpkin Bread Mix from Thrive Market. (Note blender in the background still intact, RIP blender pitcher.)
I liked that it was almond flour-based and has minimal sugar. The texture was a bit spongy, but the little man didn’t seem to mind. It was really easy to make, so that was a win for Mama!
We ordered out take out from Thailicioius, I got drunken noodles with tofu (medium hot) and ate the whole thing in one sitting.
We also ordered takeout from Pei Wei, and I got Kung Pao Shrimp with extra broccoli.
And we made sourdough bread pizzas, so good! Putting that pack of canned black olives I bought at Costco to good use!
We meal prepped the Columbus Pre Seasoned Turkey Burgers from Costco to eat with random steamed veggies all week. So this was lunch for both of us most of the week.
We made tostadas with BB ground beef, canned tomatoes, canned refried beans, Monterey jack cheese, and a side of taco seasoning flavored cauliflower rice (from frozen.) Made my tostada shells by baking corn tortillas at 400F for 12 minutes, flipping halfway through.
Last night I made this BOMB DOT COM pasta to eat with steamed frozen asparagus (from Costco). It was kind of similar to this recipe, but I used chicken sausage, Banza spaghetti noodles (from Thrive Market), and added marinated artichokes.
And finally, Mr. Hungry requested I make these fruity pebble rice Krispy treats. Unfortunately, you aren’t supposed to use stale marshmallows in rice Krispy treat recipes, because they turned out hard as a brick! Luckily, Mr. Hungry was able to save them by putting a piece of bread in a ziplock bag with the bars, and they softened up nicely! I didn’t eat much of these though, this isn’t the dessert for me, too fruity, haha.
Fitness
Workouts are feeling pretty good, I even ran the farthest distance I’ve run in months. However, it’s getting hot, and I usually work out when we get back from our morning walk. It’s been little hard to motivate myself to get to it when I feel a little drained from walking in the heat. Probably need more water and to suck it up. ha ha
