We haven’t done one of these posts in a while! Monday I actually remembered to record my meals all day, mostly because I set my camera on the kitchen counter! Woot woot. So here we go…
All days of the week start the same – coffee plus 1 tablespoon of collagenand this week I tried TJ’s coconut creamer, while I finished grading finals. (Recycled Photo)
Next up, it’s walk time every morning I’m out the door by 6 am because that’s when it’s still cool enough outside to walk! When I got back I heated up leftovers for breakfast because there was no time to make breakfast (aka fry eggs up). I threw together some brown rice, sauteed Brussels sprouts mixed with laughing cow, and grass fed steak. I recently signed up for Butcher Box, I’m planning to do a full review but I will say that so far we love it! I found out about it via PaleOMG and signed up using her link. I worked on finishing up the stuff for the semester most of the morning. Mid morning I had a banana with flax peanut butter (it’s amazing recipe coming soon!) I still have to take pictures of it, actually, I have to make more to take pictures of. I INHALED it before heading out to see Dr. K about this stupid shoulder that bites me. I stopped by TJ’s on the way home for some much-needed veggies in the house! Then I threw together leftover ground beef seasoned with taco seasoning in romaine lettuce leaves topped with my favorite TJ’s Harissa Salsa. (Another Butcher Box win! Referral Link)
On Sunday Mr. Hungry went out to get Starbucks but I didn’t end up drinking mine, so I was really happy to have this little pick me up waiting for me though! I’m obsessed with the toasted coconut cold brews!
So funny, Nala inhales her dinner but takes all morning long to eat her breakfast. She finished that up while I cleaned up lunch and put groceries away.
Meanwhile Missy does not let her presence go unnoticed, ever since we started giving her treats downstairs she thinks she owns the downstairs… including Nala’s toys…
By 12:15 I was back to work, I was waiting to hear from one last student before I got things all submitted so I started editing photos for Monday and Tuesdays post. I snacked on these sugar snap peas straight out of the fridge right after lunch because I was still a bit hungry.
I finished up the last little bit of grading and then worked on Monday and Tuesdays posts. Somewhere in there, I ate an RX bar, I think around 3:30 pm. By 6:15 pm I was starving so I whipped up a rather unexciting dinner of an egg, egg whites, salsa, and broccoli. I know, glamorous! It’s funny, sometimes we eat really fun meals I cook for the blog all day long, and sometimes I eat cottage cheese all day long. Balance is achieved somewhere in there.
I’m usually good after dinner, I don’t typically crave anything sweet but today I got an uncontrollable sweet tooth so I had a handful of chocolate chips. I must get some kind of good dessert up in this house asap!
