Last week I tried something new…. egg whites in my oatmeal for protein instead of my usual protein powder. Protein is an essential part of breakfast, it helps stabilize blood sugar and keep you full but sometimes it can be a struggle to get it in. Some days there just isn’t time for eggs and breakfast meats, or sometimes you crave a steaming bowl of oatmeal on a cold winter day! I wasn’t sure how I would feel about it but I loved that it added volume and fluffiness. Of course you can’t have oatmeal without cinnamon, so I sprinkled some on top and immediately my house smelled like a cinnamon roll. Did you know cinnamon is thought to help with insulin sensitivity as well? So that makes it a perfect compliment to the oatmeal! The coconut cream adds healthy fat to keep you full all morning and decadent richness that makes you want to dive face first into the bowl!
Ingredients:
- 1/2 cup oatmeal
- 2 egg whites
- 1/2 -1 cup water or milk (I used unsweetened almond milk)–> depends on how soupy you like your oatmeal all preference!
- 2T coconut cream
- 3-4 vanilla stevia drops
- dash of cinnamon
Directions:
- “Whisk” eggs, oatmeal, stevia and almond milk together. Heat on high for 3-4 minutes stirring every 30 seconds until eggs are fully cooked and oatmeal reaches desired consistency.
- Stir in desired cinnamon and coconut cream.
- Enjoy!

Usually I’m one of those people that hold off as long as possible and then finally give in after Thanksgiving. This year I’m all about it, I can’t get enough! Mr. Hungry loves it which makes me love it too, and it doesn’t remind me of studying like it did when I was in school so I think I can enjoy it now!
