Chocolate Chia Protein Pudding
Today I broke free of the unexciting food rut! This morning I had chocolate chia protein pudding and it was delicious!
The bonus is, I actually made this last night so it was ready to go for this morning. All I had to do was add the yummy toppings!
Here is what I used:
Ingredients
-1/4 cup chia seeds
-1 scoop vanilla whey protein powder
-1 cup unsweetened chocolate almond milk
-sweetener to taste- I used 6 drops stevia
-1/2-1 tbsp unsweetened cocoa powder (not shown)
To make:
Then all you have to do is combine everything (whisk or blend well) and let sit overnight in the refrigerator.
This morning I scooped out half the mixture and first topped it with a sliced banana
…and then I topped it with some pumpkin seed flax granola from Sprouts and raisins. It would also be good topped with berries, other dried fruit, nuts, nut butters or what ever you like! I usually take my breakfast to the table but I ate it all in the kitchen… it was sooooooo good!

Green Juice
I was SO excited that I almost forgot to drink my green juice I bought yesterday! I like Evolution because their “green juices” are cold pressed, so they’ve never been heated. Ideally that would mean that the enzymes and other good for you molecules like antioxidants, vitamins, minerals etc. haven’t been destroyed by heat. The essential greens is not sweet enough for me, but the sweet n’ greens is a little too sweet, so therefore I usually combine them. They are kind of expensive $4.00 per bottle at Vons or $6.00 at Starbucks (they now own Evolution) so I usually drink both bottles all week. I seriously CAN NOT wait to get my own juicer!
I’ll tell you more about today’s snacks, lunch, and dinner by tomorrow, now I’m off to the gym! Let me know if you try this recipe I’d love to hear if you liked it!
