Hi Friends! Guess what I did again last night? HOT YOGA! I’m literally obsessed, which is quite a statement coming from someone who really really struggled with keeping up a yoga practice in the past. I mean I would go, but I struggled to get there and struggled the whole way through. If I’m being honest I found it boring and not relaxing. Hot Yoga has literally turned everything around for me. Last night I was dancing around the house singing and telling Mr. Hungry how rejuvenated I felt. He was like “whoa maybe I need to go with you.” Plus to make things even better, these delicious coconut waters the folks over at Cocozia sent me to try out have been the perfect re-hydrating drink after a hot yoga sesh!
I quite literally HAD to share with you what we had for dinner Sunday night because it was sooooooo good. Really it’s not a new recipe because it’s based on this recipe, which has long been one of our fallback meals when we don’t feel like cooking or doing a lot of dishes.
Since I had a massive zucchini in the fridge that I desperately needed to use (from two farm boxes ago) I thought I’d try it out in place of the Brussels sprouts in this easy three ingredient dinner.
Here were my ingredients:
– 12 ounces TJ’s Sun Dried Tomato Basil Chicken Sausage, quartered
– 3-4 medium size zucchini or 2 large (or one massive one like I had), quartered
– 5 Laughing Cow Garlic Cheese Wedges
Since the zucchini cooks really fast you can throw it in with the chicken and saute it in a tablespoon of olive oil for 8-10 minutes, mix it with the cheese wedges and you’re good to go! I sprinkled some red pepper flakes on mine because I like almost all my food with a kick 🙂

That meal sounds right up my alley – I love those sausages and Laughing Cow, and I’m up to my ears in zucchini! Definitely recreating that soon! Yum.
