Hi, Friends! Today I’m super excited to share with you a lunch I’ve been devouring lately (and planning to have today), I’ve had it maybe three times this week already!
For Dinner Monday night I stuck a few pieces of frozen salmon fish fillets (we get our as Costco, so we have a steady supply) in the oven to go along with Mr. Hungry’s Birthday Lobster (thank you YouTube for instructions on broiling that)! It was easy enough and quick, if you are trying to save a few bucks and looking for a fun date night in I would say give making your own lobster a try! These two tails were only 10 dollars, a steal compared to the restaurants and they took 12 minutes to broil! Mr. Hungry said it came out better than Red Lobster… I did load it up with garlic butter…
All we do for our salmon is top with seasonings like garlic, dill, etc… wrap them in aluminum foil individually and bake until it flakes/is done, (time varies depending on if frozen or not 15-40 minutes at 400F), nothing fancy but it taste delicious! (Fun fact fish was the first thing my Grandma ever taught we to make, never mind we covered it in miracle whip.) We had plenty of leftovers to enjoy all week, Mr. Hungry had some salmon for breakfast yesterday morning and I’ve been eating these lunch wraps which are super simple and so delicious!
Just take your favorite wrap (my favorites areLa Tortilla Factory – Low Carbshown in this picture or their gluten free wraps work well too) and smear it with a couple of tablespoons of your favorite hummus – I’m obsessed with hope hummus (or make your own green onion and garlic, spicy Mexican hummus, paleo buffalo butternut squash hummus or creamy yogurt hummus). Add lettuce; I like to tear mine up, so it compacts a bit better into the wrap. Now the best part, top with pieces of juicy mouth watering salmon.
Roll it up (I closed the back end like a burrito and kept the front open) and stick a toothpickin it so it doesn’t come apart. If you need a portable lunch, I would just roll it in aluminum foil or saran wrap so that you could just peel back the foil/wrap while you eat keeping it together.
5 Minutes later it is time to eat (or lunch is packed) with a healthy, filling, and delicious meal!
I know it’s not a real “recipe,” but it is a healthy lunch idea and anything I eat more than three times I feel is worth sharing with you guys!

- 1-2T hummus
- 2-4 ounces Salmon (could used smoked if you don’t have any leftover!)
- shredded greens (about a cup)
