Who Wants Angel Food Cake for Breakfast????
ME! As I type I am currently enjoying a bowl of Angel Food Cake overnight oats. Yummmmmm

…and even though I get free coffee at the hospital I wanted to start my Monday off with some really really really good coffee, so I set the auto-timer last night to brew cinnamon vanilla nut coffee this morning. Man this stuff smells divine, perfect to jump start a Monday morning!
I’m sure most people are already on the overnight oats bandwagon, but if you’re not, you definitely need to hop on! Plus it’s another great way to use chia seeds! I can’t believe I used to not like oatmeal, thats just crazy to me. Now I get cravings for it all the time! But seriously who wants hot oatmeal when it’s registering over 100 out (at 7 am)? Overnight oats are a cold creamy treat that can be made in minutes at night, and devoured in the morning.
Here is what you need to get started:

All I did was combine the following ingredients and stick the bowl in the refrigerator over night. EZ PEAZY! The frozen strawberries thawed out and gave a little strawberry syrup just like what you would put on Angel Food Cake! The sunbutter and sweetener give the oats enough sweetness it actually taste like cake! Most importantly, the oats and chia absorb the almond milk overnight making for a cold and creamy yet chewy breakfast bowl of oats. Perfect for any early start to a summertime morning. Be careful though, do not omit the chia because it helps bring the whole thing together! If you want, in the morning you can top with more milk, sun butter, and fresh or dried fruit! Whatever you like!
– 1/2 cup rolled oats
– 1/2 cup milk
– 1 tbsp sunbutter
– 1 tsp chia seeds (do not omit)
– 5 frozen strawberries
– stevia (I used 5 drops-not shown), or sweetener of choice to taste or 1T Maple syrup
– optional: add 1scoop of collagen or your favorite vanilla protein powder to give this some additional staying power!

Is there a food you used to not like you can’t get enough of now?
Like I said about 2 years ago I used to not like oatmeal at all. Then some wonderful person gave me a bowl that they had mixed peanut butter in and I fell in love. I never looked back, I kind of became obsessed. It was like a whole new world of possibilities opened up for me… the flavor combinations are endless! I still don’t prefer my oats without a little nut butter, but I’ve definitely had a change of heart! So glad I did because they are such an easy healthy way to start the day!

Great looking soaked oats! They’re a personal favorite of mine too. As for foods I used to not like but love now I’d say brussels sprouts now that I learned how to roast them and cold cereal like cheerios and shredded wheat, that I hated as a kid, but look forward to now.
