Hi, friends! Today I’m just popping in to let you know I’m guest posting with this delicious sweet potato and greens breakfast bowl over at my friend Emily’s blog, Zen & Spice.
This recipe is super easy to make and so delicious. I might have stoled the idea from Wildflower Bread company when Mr. Hungry and I ate there one weekend. So, good! Just saute your sweet potatoes and red onions in a little oil and seasonings.
Once they are soft, set them aside and wilt down your arugula and power greens.
Now add some cut up roasted red peppers, I buy mine from Trader Joe’s.
Once that’s done up nicely, you can use another small skillet to make your egg, OR you can set the greens, peppers, and sweet potatoes aside to cook up your eggs in that same pan. Your choice, you know what I would choose, the fewer dishes option, but that’s me! Either way, then you sprinkle it with feta and pumpkin seeds, then immediately dig in!
