Hi, friends! Today I'm just popping in to let you know I'm guest posting with this delicious sweet potato and greens breakfast bowl over at my friend Emily's blog, Zen & Spice.
This recipe is super easy to make and so delicious. I might have stoled the idea from Wildflower Bread company when Mr. Hungry and I ate there one weekend. So, good! Just saute your sweet potatoes and red onions in a little oil and seasonings.
Once they are soft, set them aside and wilt down your arugula and power greens.
Now add some cut up roasted red peppers, I buy mine from Trader Joe's.
