First things first, last night’s dinner was AMAZING. I made Mini Mediterranean Turkey Meatloaves from Iowagirleats.com and they were delicious! I’ve been wanting to try this one out forever, so glad I finally did!
The only changes I made were: I used 1.25lbs ground turkey meat (because that is what came in the pack) so the recipe yielded five mini meatloaves instead of four. I also used black olives instead of kalamata olives (because I am not a fan). Other than that I followed the recipe exactly and it turned out fantastic! I ate mine over a bed of salad with balsamic dressing, but I was too full to eat the carrots. Super moist and delicious, I will definitely be making this again!
After dinner we met with our new gym’s activities person who helped Paul and I set some goals for the next couple of months. Although I’ve had my goals in my head, it was actually really helpful and motivating to put them on paper. We set our goals to be achieved by the day of the wedding because that’s easy and in two months! EKkkk!
With that motivation I was up bright and early at 4:30am to try the INSANITY group fitness class at 5am. According to the website, “Plyometric drills with nonstop intervals of strength, power, resistance and core training moves can only be described by one word – INSANITY.” Yep, that pretty much sums it up. I kept thinking to myself “there is no way this class is an hour long” but when the 30 minute mark passed, it was clear we weren’t stopping. I was dripping in sweat so of course I loved it, and I’m loving getting my workout done at the start of my day! When I came home I made a small protein shake. While I drank it I gave some love to Missy, my needy little kitty who LOVES attention!
A couple hours later I had an official breakfast.
Strawberry Almond Overnight Oats
Ingredients:
– 1/2 cup rolled oats (gluten free works)
– 1/3 cup unsweetened almond milk
– 1.5 tbsp almond butter
– 5-6 drops stevia
– 5 frozen strawberries
– 3/4 tsp chia seeds
– 3/4 tsp cinnamon
– 1-2 tbsp sliced almonds for topping
Instructions:
1. Combine all ingredients (except sliced almonds) in a bowl.
2. Refrigerate overnight or for a couple of hours.
3. Slice strawberries and remix, add more milk if desired.
4. Enjoy cold or heat them in the microwave (1-2 minutes max) with any toppings you wish!
Very similar to my angel food cake overnight oats recipe, but a little less sweet and more nutty.
Feel free to make any substitutions just don’t omit the chia seeds (they help absorb the moisture), if you don’t like the stevia aftertaste add about a tsp of honey instead. Enjoy!
