Satisfying the Panera Egg Sandwich Craving
Lunch today was not stellar, but as I guess they can’t all be winners. The tortilla soup was good and so were the veggies, but the flatbread was not so good. I ate about 1/2 of one of those pieces. Then I had the rest of my bag of almonds from a couple days ago. It was an even bigger fail because until I ate it, I forgot how soup taste good but bothers my stomach…whoops….. ha ha
Isn’t she the sweetest? I played with her a little extra when I got home today because she was a little sad her Mommy was at the hospital volunteering.
I was hungry and CRAVING an egg sandwich when I got home. Okay truth? I stopped at Panera for a breakfast sandwich (because I have a coupon, you know I love my coupons) but they of course only serve breakfast sandwiches in the morning (stupid jar). So of course this triggered a craving for an egg sandwich. I knew I wanted it to be cheesy, full of ketchup, yummy bread, and with a RUNNY egg. Here is what I used:
Check out this bread. It is SO amazing and yummy. My roommate and I used to get those whole wheat sandwich thins all the time (I still do sometimes) from Costco and use those to make sandwiches. I still like those and think they are great for portion control. You can spare yourself a whole bunch of calories and actually have some sides too. However, recently I’ve decided that when I eat bread I want real, chewy, satisfying bread. The kind that makes you excited to have a sandwich, toast, or anything. So, I bought some dense, nutty, sweet and savory whole wheat bread…and I’ve been quite happily enjoying it. It’s made with superfood ingredients, it’s 100% whole grain and per slice you are getting 5 grams of protein and 6 grams of fiber. Um… YES PLEASE! I stuck that bad boy in the toaster oven topped with cheese.
I guess the egg sandwich was meant to be because I actually made the fried egg without breaking the yoke. Ask my ex-roommate, this is nothing short of a miracle.
Smothered with ketchup (yep accidentally got some on top) and delicious!
I know this kind of a small meal so I may be hungry after I workout. If I am I’ll have some small snack (like a granola bar, apple, muscle milk etc.)because I’ve been kind of splitting dinner pre & post workout. (See post here.) As I type I snack on some dates and as soon as I click submit I’m out the door for some Zumba!
