Anyone else feel like the weekend flew by and now it’s Monday again? Every. Single. Week! Okay boo hoo let’s move onto last nights terrific dinner!
Last night’s shrimp stir fry dinner (and tonight’s leftovers) was bomb dot com (yep I still say that) and took only 10 minutes to prepare.
Here’s what I used:
– 1 bag TJ’s Frozen Shrimp and Vegetable Stir Fry
– Two Large Eggs
– 1 Precooked Quinoa Bowl
Following the directions on the bag I sauteed the shrimp in oil, but after a minute or so I added in two eggs.
After the shrimp had turned pink and the eggs were set, I added in the frozen veggies and continued to follow directions. I stir fried it for another couple minutes, then added in the seasoning. I then dumped in one bowl of precooked organic quinoa I picked up at Costco last weekend.
and continued to stir fry until everything was hot.
This could easily be done with a bag of frozen shrimp and frozen vegetables as well. The “seasoning” was really just pepper, salt, and garlic. For me and my sort of “temporary living condition” the pre made up bag works well. You could also use egg substitute or egg whites instead of the egg if you are watching your cholesterol.
This quick, easy, and healthy meal totally blows last weeks attempt at a yummy healthy asian food lunch right out of the water!
Okay and confession time, I topped it with my two favorite food groups: cheese and sirracha!!!!! (Yes, I consider them food groups because I could live off them.)
And dessert…
Last week I decided to buy some dark chocolate almonds and low fat ice cream sandwiches so that I had healthier desserts around. I’m happy to report that plan worked well, I’ve done a much better job at keeping my sugar cravings under control!
*A note about posts, they are going to get kind of sporadic. Its time to start studying for the RD exam and putting in job applications! I can’t believe my career goals are finally coming to life, it seems like it was so long ago when I decided to go to graduate school and become a Registered Dietitian. I’m so excited for it to be coming true!
