This dip is the result of a jar of roasted red peppers from Trader Joe’s. I intended to make it the same as my creamy hummus yogurt dip but with the jar of roasted red peppers added into the mix. As I was throwing things into the food processor I grabbed for the salsa in place of water and before I knew it *plop* went in some avocado, it was like I had no control over my actions. By the time I was done I had surprised myself with the tastiest spin on hummus ever. Even though it isn’t doused in Franks Wing Sauce, this is still the perfect dip to throw together and bring to your Super Bowl festivities this weekend!
Ingredients:
- 1 can garbanzo beans (drained, rinsed)
- 1 jar roasted red peppers (drained)
- ½ cup non-fat Greek yogurt
- 1T lemon
- 1T minced garlic
- 2T salsa
- ½ tsp salt
- ½ tsp cumin
- ¼ Avocado
- 1T tahini (sesame seed butter) or ¼ more avocado
Directions:
1. Combine all ingredients in a food processor
Process till creamy and smooth
2. Serve with tortilla chips, pita chips, and/or veggies. Store in air tight container in fridge for up to a week (or your yogurts expiration date.)
Everyone will love this one because unlike regular hummus, pretty much everyone loves salsa. Sneak a healthy dip onto the super bowl spread but shhh don’t tell anyone its healthy and they will never know! Of course that’s unless you are a dietitian and everyone just assumes EVERYTHING you make is healthy, even when it’s obviously not. What went in this? “Uh, butter, sugar, okay and maybe just a little kale.” Maybe they have a point…. anyway this dip isn’t like that. It’s all healthy so there are no sneaky “healthy” ingredient involved, just fresh whole foods which pack a flavor punch that will satisfy anyone that even remotely likes salsa, so pretty much everyone.
