Recently the folks at A2 milk reached out to me to partner with them to develop healthy recipes using A2 Milk. I was excited to learn more because I had heard many of my Dietitian friends raving about A2 milk for quite some time. You may have even seen A2 milk at the grocery store in the dairy case.
As a Dietitian who specializes in food sensitivities and GI health, I find this concept super fascinating. Dairy cows in today’s times produce milk that contains both A1 and A2 proteins in their milk, but they used to only produce A2 protein.
The theory was that the rise in milk sensitivities may be related to the new A1 protein. So, the A2 milk company set out to isolate only dairy cows that produce only milk with the A2 protein. Recent research has found that for some people, the A2 protein is easier to digest.
Why would it only help some people? Well, if you are lactose intolerant, you lack the enzyme to break down the natural sugar found in milk known as lactose. Symptoms usually include gas, bloating and diarrhea. Unfortunately, that doesn’t have anything to do with protein.
Some preliminary research is showing that some people who experience GI upset after consuming milk may be sensitive to the A1 protein and are able to digest the A2 protein with no discomfort. What I’m very interested to see is more research about how the A1 protein breaks down into a component know as BCM-7 which has been linked to inflammation and damage of the GI tract.
Unfortunately, right now there isn’t enough research to back any sort of claims of A2 being the better choice up. What I can tell you is that if you currently avoid drinking milk because of GI discomfort, you might want to give it a shot and see how you do with it. There is no taste, color, or nutrition difference (same protein, fat, and carb contents) in the milk.
I’ve never had an issue with dairy products so I can’t speak to it in that way, but I loved making this delicious creamy casserole. Shout out to my MIL who gave me the idea for it, it’s based off a meal she told me about she used to make all the time! It’s definitely very creamy, flavorful, and filling! All the things a casserole dish should be required to be. Let me know if you try it or if you have thoughts on trying A2 Milk!

That is actually pretty fascinating about the milk proteins. I’ve never even heard of that before. I don’t think it’s an issue for our family, but at least now I’m armed with a bit more information. And your recipe looks so delicious, I can’t wait to try it!

This reminds me of a dish my mom used to make with white rice, a bag of frozen veggies, and chicken breast. It was yummy, but could definitely use an update with a healthier twist!
