I’m not sure what my recent obsession with chicken chorizo is, except that its already flavored and ready to make any meal amazing in just a few minutes. Plus Mexican food is by far my favorite type of food and I only recently discovered chorizo. Every time I open the freezer I pause to stare at the butternut squash that I bought from COSTCO (ya there is a lot) wondering what I was going to do with it. It feels like the autumn squash train is pretty much over yet I’m still trucking along. I mean I do really love it, remember the days when I literally had some form of squash for breakfast, lunch and dinner? I digress, this one skillet meal was inspired by this recipe and this recipe and came out so tasty. Don’t let the dark badly lit photo fool you (unfortunately I can’t take every photo at 12 noon on Sunday when the light is the best so some are just going to have to suck), this is an easy dinner that will please anyone who likes enchiladas (including my hubby who hates squash). The leftovers were easily portable in a small dish and an awesome deviation from my typical salad for lunch.
Ingredients:
-1 Jalapeño, chopped, seeded and deveined
– 1 yellow or white onion, chopped
– 1T minced garlic
– 1/2T avocado or canola oil
– .75-1lb chicken chorizo
-3 cups cubed butternut squash (frozen or fresh)
– 4 small whole wheat tortillas, cut into strips (I used la tortilla factory)—> GF use 6 corn tortillas
– 1 cup reduced fat cheese, cheddar or Mexican
– 1 (14 ounce) can enchilada sauce
Directions:
1. Heat oil over medium-high in oven-proof skillet. Add onions, jalapeno, and garlic cook 2-3 minutes until translucent and tender.
2. Add chicken chorizo and cook 3-5 minutes until browned.
3. Add butternut squash and cook 8-10 minutes until fork tender.
4. Next add the enchilada sauce, tortillas, and ½ cheese. Stir the mixture well making sure all tortilla strips are separated and soaked in sauce. Top the mixture with the remaining half of cheese and place under the broiler for 3-5 minutes. Remove from heat and serve immediately.
Makes 4 Servings
Yesterday’s Real Life Bites
Continuing with my random additions of yesterday’s eats for every post this week….
For breakfast I had some green juice with all the typical ingredients. I actually can’t believe I took the time to make it because it was a rough morning. After I posted yesterday’s beautiful Cauliflower Pizza Casserole Post I realized there was a pretty obvious misspelling——> CassERole not ARole #fail —->pic monkey should install a spell check. Anyway I frantically tried to redo my pictures and edit the post which meant no shower. Then, in typical Type A fashion I had a freak out about how I wasn’t going to blog anymore (#overreaction) after which I found myself making green juice and taking a picture of it. The hubby just smiled and sympathetically said “that’s a hard one to spell don’t worry about it, ESPN misspells stuff all the time but I still read it.” Uh, thanks babe?

Lunch was the leftovers from this post, Butternut Squash and Chicken Chorizo Enchilada Skillet. I also snacked on pistachios and carrots.
After work I went to the chiropractor and confessed my fear of walking, standing, foam rolling or anything else. Even though my MRI results were negative I’m terrified of causing my injury to re-flare, but I know I need to get back out there. I did walk almost 2.5 miles today, so I’m praying everything holds up. Apparently my butt bone is causing some irritation to the injury by sitting on it all day, I need some extra cushioning. I think that’s definitely the first time I ever heard someone call my butt small! So now I get to be super cool and take a pillow to work, that’s going to go well for sure….
Dinner was yesterday’s spelling disaster but crazy good Cauliflower Pizza Casserole ——> think of all the flavor and cheesy low carb goodness without all the work of actually making the crust!
