Happy Monday Friends! Hope you had a fantastic weekend, I know I did filled with lots of studying for NASM! This morning started off with something new….Bulletproof Coffee. AKA butter and coconut oil in my coffee!
I can definitely see why people like this… so frothy and creamy! I just added a tablespoon of butter and a tsp of coconut oil and blended in the Vitamix for 10 seconds, hello homemade latte! I didn’t make the full dose of bulletproof coffee so it lasted me till about 930am when I decided to have some toast with egg whites on it while I study! Don’t freak out, I know the toast isn’t exactly bulletproof but I just wanted to try the coffee…
I wanted to pop in real quick to tell you guys about my recent meal prepping adventures. Recently, I’ve been prepping Mr. Hungry’s salad and a few grab and go items for my lunch Sunday WHILE I PUT THE GROCERIES AWAY. This is key for me if I don’t prep then, it probably isn’t going to happen! It’s nice to have all his salads made so all I have to do is top it with protein each night. In the mix: spinach, tomatoes, cheese, shredded carrots, hemp seeds and balsamic dressing.
What I prepped to help me out for easy grab and go: celery sticks (for peanut butter of course), divided up 1/2 cup servings of cottage cheese, cucumbers and tomatoes.
Something else I’ve been making for Mr. Hungry to add some veggies to dinner is broccoli slaw, he loves it and it takes about 15 seconds to throw together!
It came out great, definitely give it a try for a quick ready to go veggie salad!
Ingredients:
– 1/3 cup dried cranberries
– 1/2 cup cashews
– 1/3 cup champagne viniagrette dressing
– 1 bag broccoli slaw
Mix up and enjoy!

I made this a couple of weeks ago. We LOVED it ! I put some chicken in it for those lazy nights. So I made some BBQ pork yesterday and was looking for this recipe for some broccoli slaw. I thought I had pinned this recipe, but I couldnt find it. I had to look at 30 recipes to find THIS ONE ! Others were close, but I wanted to spend the extra time if that is what it took, to find it. Was so happy to find it again. !!
