I’m trying not to be a day a behind but it seems like I always am, anyways lets take it back to good old Tuesday. I started my day off by splitting a green juice with Paul, my favorite way to start the morning.
I followed up with some new coffee from Target…
I’m obsessed with flavored coffee in general, but I find myself buying this brand at Target a lot, maybe because I am a big fan of light roast coffee. My favorite is the dark chocolate truffle, then the vanilla nut which is tied with the buttery caramel, and I cannot say I cared for the caramel apple flavor. I ended up giving the bag to my fiances mom and she loved it, so it worked out great!
I was making prototypes of guests gifts and blogging when I realized I should eat breakfast, so I heated up a Pumpkin Apple Quinoa Bar. This recipe is based off my recipe for Cinnamon Apple Quinoa Bake, but the pumpkinfied version satisfies my pumpkin cravings and is SOOO good.
It is kind of like a very lightly sweetened breakfast bread that feels like a total treat but is packed with healthy ingredients. Plus, everything is better pumpkinfied and this was no exception, I promise to share soon!
I hit up the gym around 10:30am but my run was touch and go with my foot pain. Anyone else have an experience where their foot only hurt when shoes are on? I definitely irritated it during my 4 mile run, and I aggravated myself when I hopped off the treadmill to get a towel and couldn’t get the machine un-paused before the time ran out and reset itself. So here is the stats for part of it, add 1.3 miles and 12 minutes or something.
Planning on resting and icing until Friday, which might be the hardest thing I’ve ever done, if not impossible. With the wedding so close let’s face it I want to workout to relieve stress and be in the best shape I can, but I also don’t want to waste three months of training for my arch nemesis…. my ego. I really want to be able to complete the half this Sunday so I need to keep the near future in mind versus the less near future. I have put a lot of effort into both events (the half marathon and the wedding), don’t want to be limping down the street or the aisle! Argh! Blerg! Okay I’m done complaining, moving on…
I did some errands and didn’t get home till 1pm so I quickly through together and devoured a salad for lunch.
After that I prepped tonights dinner because I knew that we wouldn’t be back till late. I was right, after getting our marriage license (!!!!!!!!!!!!) and the bank it was late and we were ready to eat. I had made a spaghetti crusted quiche from PaleOMG ready to go and it was delicious!

I did change a couple things like substituting chicken breakfast sausage for regular and 2 egg whites for 2 of the 6 eggs, but thats pretty much it. I will DEFINITELy make this one again, it was SO good. Like I do with just about everything it was slathered in avocado and hot sauce, I just can’t help it I’m addicted to spicy goodness.
Icing my foot (how people take ice baths I will never know, I can barely stick my foot in a tub of cold water) and Sons of Anarchy concluded the night. Here is to hoping that today is plenty productive!
