I have half a mind to just publish this recipe and say here you go. Here is the recipe, this is it, take it or leave it I’ve got to go. Then I wouldn’t get to complain about how our house is under contract for the third time.
People are submitting offers just to hold the place but aren’t serious about purchasing it, WHO DOES THAT? What kind of evil do you have to be to do that to someone? The lack of control I have over the situation is infuriating as well. I mean come on people, what do we have to do to catch a break.
So, yesterday I did something I never do. When we had to open up our house for showings for the third time I took myself down to the bar to get a drink and continue working.
I was severely underdressed, and even though they said they had wifi, it didn’t work. So I ordered a drink, and then another while using my hotspot to get some work done (can’t wait to see how much data that drained).
Plus, to everyone around me, it just looked like I was dicking around on Facebook. The poor pathetic girl (me) has to come to a happy hour alone. Aww, she is so lonely she has to be on Facebook. Needless to say, it wasn’t the proudest moment in my life.
About two sips into the second drink and I remembered why I don’t drink when I’m stressed. It makes me feel like dog shit, especially with how hot it is outside right now.
That’s okay though; today is another day, a day for better decisions. A day to look at the cup half full or whatever that expression is. I’m grateful we are under contract (albeit for the third time), I’m happy we found a home we like to move into, I’m happy today is a rest day,
I’m happy I’ve got pesto chicken in the fridge, and I’m glad I put on makeup today. It’s the little things people, got to stay positive!

Dairy Free Arugula Pesto
You guys have got to try this pesto; it’s positively delicious. See what I did there? Stay positive! No seriously, I love pesto, but this might be the best one I’ve ever made. It’s buttery from the macadamia nuts, peppery from the arugula, and silky smooth with an unbeatable richness from the olive oil.

I’ve never made dairy-free pesto before, but this is better than any traditional pesto I’ve ever tried! Let me know if you try it!
Dairy Free Arugula Pesto
Ingredients
- 3/4 cup macademia nuts
- 1/2 cup olive oil
- 2 tablespoons lemon juice
- 1 tsp garlic powder
- 1/4 teaspoon salt or too taste
- 3 ounces arugula leaves
Instructions
- Add macademia nuts, arugula, garlic, lemon, and salt to a food processor. Put the lid on the food processor and start it up. While it's processing slowly add olive oil through the top, continue until all the olive oil is added to the food processor. Continuing processing until smooth, you may want to stop the processor and scrap the edges once or twice.

i LOVE that this is made with macadamia nuts – how cool!! and arugula is an awesome twist. since basil is just about my favorite thing ever, i might try this with half basil & half arugula!! thanks for sharing your recipe 🙂
