Breakfast for Dinner: The Omelette Bowl
All weekend I was CRAVING eggs and never seem to be able to have any. So I knew I wanted eggs this week, without fail! Therefore, the last two nights I’ve had the easiest and yet most delicious breakfast for dinner ever. I call it an omelette bowl because I basically just put whatever I would put in my omelette over brown rice. This version was my southwest omelette in bowl form.
For this version, I start by sautéing a very large handful of spinach for about 60 seconds on medium high.
Meanwhile whisk one egg and two egg whites (I used 1/2 cup liquid) in a bowl. Season to taste, then pour the eggs over the spinach and scramble them until eggs are set. While they are cooking I quickly stick my brown rice in the microwave. I get these bowls at Costco and the convenience factor is totally worth the cost (I think they are like a dollar something each). Brown rice in 90 seconds? Yep. Amazing. (Although, you could easily cook ahead some brown rice or even quinoa and use that!)
Once the eggs are done cooking and rice is done microwaving you can assemble your bowl. I used half the brown rice for one bowl and then topped it with LOTS of salsa and some cheese (I used 1/4 cup Trader Joe’s Mexican Blend Lite).
For 1.5 cups spinach, 1/2 package of brown rice, 1 egg, 1/2 cup egg whites, and 1/4 cup mexican cheese lite:
