Chocolate Banana Oatmeal Muffins

  •  Preheat oven to 425F. Line a muffin tin with silicone muffin liners or grease.
  • Mash bananas.  
    2 cups ripe bananas (about 3 large)

  • Add in eggs, maple syrup, almond milk, and vanilla extract. Mix until well combined.

  • Add in oats and let sit 5-10 minutes. (I usually just put away the ingredients I've already used.)
    1 cup rolled oats
  • Add in flour, cocoa powder, baking powder, and baking soda. Mix until just combined.  Fold in chocolate chips.
    ½ cup cocoa powder, 1.5 cups whole wheat pastry flour, 1 teaspoon baking powder, ½ teaspoon baking soda, ½ cup chocolate chips
  • Divide batter among the muffin tin evenly. Place in the oven and turn down to 350F. Bake for 15-20 minutes or until an inserted toothpick comes out clean.
