Banana Baked Oatmeal

One Bowl Banana Baked Oatmeal is a delicious meal prep friendly breakfast that tastes like banana bread in oatmeal form.

  • Preheat oven to 375F. Grease an 8x8 baking dish. Mash bananas in a large bowl.   Add the remaining ingredients (dry first) to the bowl. Mix well to combine.  Pour into the prepared baking dish. Bake for 40-45 minutes until set.  
    2-5 medium bananas, 2 ⅓ cups rolled oats, 1 teaspoon baking powder, 2-3 teaspoon ground cinnamon, ¼ teaspoon nutmeg, 2 tablespoon ground flaxseed, ½ teaspoon sea salt, 2 cups almond milk, ¼ cup maple syrup

Notes

*I used four mashed bananas and another banana for topping. This recipe isn't like banana bread, where it has to be EXACT. You can use anywhere between 2 and 4 mashed medium bananas, depending on how much banana flavor you like.
