- 3 ounces frozen shrimp
- 2 eggs
- ½ cup steamed broccoli chopped
- avocado sour cream, salsa for topping
Heat shrimp in a nonstick pan shrimp until defrosted (drain liquid half way through) and lightly seared
Remove from pan and set aside, set the pan on medium heat.
Add two large eggs to the, using a rubber spatula break yolk up and let mixture spread flat across the pan.
Add shrimp and broccoli to the thin egg layer.
Once eggs are completely set, enjoy your omelet!
