Crispy pulled pork on a bed of greens with juicy sweet corn and crunchy apples mixed with creamy coleslaw dressing!

Ingredients

For the salad (ingredients listed for one salad):

  • 8 cups greens I used romaine hearts
  • 2 cups tricolor coleslaw mix cabbage, carrots, and purple cabbage
  • 1 sliced apple I used a mandolin at the #2 setting
  • 1 cup sweet corn

Instructions

  • Assemble salads with 2 cups greens, ½ cup tricolor coleslaw, ¼ sliced apple, ¼ cup sweet corn, and ¼ cup crispy shredded pork.
    1 batch healthy coleslaw dressing , 8 cups greens, 2 cups tricolor coleslaw mix , 1 sliced apple, 1 cup sweet corn , 1 cup crispy shredded pork
  • Top with dressing and green onion, enjoy!
    1 batch healthy coleslaw dressing , 1 cup green onions

Notes

Like most salads, I don't recommend storing this once it's made unless you don't mind soggy salad.  If you want to prep it in advance, build your salad upside down, dressing first, then corn, then onions, then meat, then apples, cabbage, and greens on top! Try to store leftovers separately (greens separate from dressing from pork etc.)
